Honestly I beat the 8 armed bitch on my first try as samurai however the dual wield dagger you can apply holy to is by far my fav weapon to use for many bosses its ash of war is decent for early game

I've watched like 5 bow only runs and none of them have figured out the shortbow moveset (which the black bow also uses, which is what makes it far and away the best base game bow). When using a shortbow or the black bow, not only is the jump attack faster with a shorter recovery time, you can also get out an additional near instant shot immediately after landing. Additionally, you can do another near instant shot right after rolling or backstepping. Using this lets you stay insanely mobile while shooting out arrows MUCH more often, doing way way more DPS than any other option (aside from Radahn's Rain on giant bosses).
