The Wollersheim grounds are compromised of a winery, distillery, 27 acres of vineyard, and underground limestone aging cellars. Winemaker Philippe Coquard is a 13th generation French Winemaker and, along with his wife Julie, combines history, tradition, and innovation to continue the legacy of making distinctive Wisconsin produced products.

Ok, but isn't it better to reduce quantity of clusters much more earlier not during the late veraison? Even before blooming? I leave two or three clusters on the shoot, and all the plant's energy goes to them from the very early stage of vegetation.
Great question! While reducing the number of clusters early on can help control fruit load, we also count buds during pruning and manage fruit load throughout the season. However, green harvesting at late veraison is crucial for fine-tuning quality. At this stage, we can see how clusters have developed and focus the plant's energy on the ripening fruit. If you reduce too early, it can overstress the vines, and after a point, reducing clusters won't concentrate sugars further; instead, you just end up losing fruit. Timing is key to achieving the best balance between yield and quality.
I am in florida, and I planted four different, one is a seeded Concord, what I want to know is does it matter how tall the trunk is? Because I'm short and I don't want to have to do a whole lot of overhead work I'm thinking about having the trunk only be about 3 ft do you think that would be okay
Thanks for your question! Having a shorter trunk, like 3 feet, can work, but you need to consider the climate. In warm and humid regions like Florida, being closer to the ground can increase the risk of fungus due to limited airflow and higher moisture. This is especially important for varieties like Concord, which can be more prone to disease in such conditions. I'd recommend checking with local growers or experts in your area, as they'll have the best advice for managing your specific conditions.

We've been privileged to have met Philippe Coquard at a couple of his pairing dinners at the winery (sign up if you are fast!!!). He is always happy to share the history, the process and the general enthusiasm to be making wines. Pairing great food just adds to the experience. Creating great wines though is the testament to how much he cares about the industry and the future of US wine production.

great podkast! regarding the freezing of juice, the second most popular sparkling wine in the world, Prosecco, can argue with you... They cool the juice and make wine when the suppliers need it... And their financial success speaks to something significant... but still, I agree with you that faster is better)
Great point! Prosecco's method works well because it's a sparkling wine, and its production process often involves the Charmat method, where the second fermentation happens in a large tank. Cooling the juice allows them to control the timing of that fermentation, ensuring the wine is fresh and bubbly when needed. However, since we don't carbonate most of what we make, our approach focuses more on maintaining the natural characteristics of the wine through a quicker, more straightforward process. This helps preserve the flavors and aromas that define our wines, which is a bit different from the needs of sparkling wine production.
One of my best memories at Wollersheim was when Philippe gave a cellar tour not long after he arrived in the US. Around his neck was a silver multi-faceted tasting cup that was given by his family. I was so impressed by him so many years ago. Continued success my friend.

We do, but we are currently exploring ways to continue minimizing the use. We have tried steam and just recently we have invested in a new mower that can mow between rows, stay tuned!

Good time of year, I’m watching you from Russia, I’m very glad that you weren’t affected by frost. This year, in our central part, all the shoots, without exception, were frostbitten, 100% of the crop was lost. Thank you for the update, we'll be following your progress. good luck with the new grape varieties on the property.

Yes! We use a variety of organic compounds in our mulch.

I have a small vineyard and have always enjoyed your videos!! We don't have very many deer but notice that they like to nibble on the vine leaves at the end of the rows. Last year, I tied aluminum pie tins to the end posts and all the leaves grew back. It seems cheaper than a fence at this time, and might help those small homesteaders who are short on cash.

We grow a Marechal Foch, Lacrosse, Marquette, St. Pepin, and other varieties that do well in our Wisconsin climate.

While some thrive with cane pruning, others fare better with spur pruning, and some are versatile enough to accommodate either approach. In our practice, we exclusively employ spur pruning for its efficiency, allowing for a faster process in a single pass. If you opt for cane pruning, it's important to note that canes must be securely fastened each year. Additionally, it can be beneficial to rejuvenate the cordon periodically by introducing a new cane as needed.
