That last theory you had as the editor's note sounds a lot like the song Funny Things. To be honest, I think Jax rolled his eyes at what Ragatha was saying about Kaufmo's funeral in an attempt to hide how he actually felt. (Like, "okay, don't start the waterworks, you can't show them you care".) I definitely think he is intentionally hiding his empathy, though as a coping mechanism more than sociopathy. I'm not as knowledgeable about psychology and how the brain works as others, but I was also once someone who didn't like to show emotion around others(which was REALLY hard because I cry so damn easily), and the blinking and rolling eyes was something I would do to keep myself from crying. He might see showing emotion as weakness, or more likely, intentionally pissing off and pushing away the others so he doesn't feel as bad when they eventually abstract. He cares, I think, but he doesn't want to care because he knows that anyone could be next, and it's also possible that he feels if he lets his guard down and shows genuine emotion, he could become susceptible to abstracting himself. Needless to say, I am so looking forward to the next 2 episodes!
