Tamales Recipe (Makes about 20 tamales) Ingredients: For the Masa (Dough): 4 cups of masa harina (corn flour for tamales) 3 cups of chicken broth (or water) 1 teaspoon of baking powder 1 teaspoon of salt 1 cup of lard or vegetable shortening For the Filling (Chicken with Red Sauce): 3 cups of shredded cooked chicken 6 dried guajillo chilies 2 dried ancho chilies 2 garlic cloves 1/2 medium onion 2 cups of chicken broth 1 teaspoon of cumin Salt to taste Additional Ingredients: 20 dried corn husks String or strips of corn husk to tie the tamales (optional) --- Instructions: Step 1: Prepare the Corn Husks 1. Soak the dried corn husks in warm water for 30 minutes to soften. 2. Rinse them well to remove any dirt, then pat dry. Step 2: Make the Filling 1. Remove stems and seeds from the chilies. 2. Boil the chilies in water for 10 minutes or until soft. 3. Blend the chilies with garlic, onion, cumin, chicken broth, and salt until smooth. 4. Strain the sauce to remove any solids. 5. Combine the sauce with the shredded chicken, mixing well. Set aside. Step 3: Prepare the Masa 1. In a large bowl, mix masa harina, baking powder, and salt. 2. Gradually add chicken broth, mixing until you form a soft dough. 3. In a separate bowl, beat lard or shortening until fluffy. 4. Incorporate the lard into the masa, kneading until light and pliable. Step 4: Assemble the Tamales 1. Spread a thin layer of masa onto the center of a corn husk (about 1/4 inch thick). 2. Add a spoonful of the chicken filling in the center of the masa. 3. Fold the sides of the husk inward, covering the filling with masa. Fold the narrow end upward. Tie with a strip of husk if desired. Step 5: Steam the Tamales 1. Arrange the tamales upright in a steamer, open end facing up. 2. Steam for 1 to 1.5 hours, adding water to the steamer as needed. 3. Check if done by peeling the husk; the masa should separate easily from the husk. Step 6: Serve and Enjoy Let the tamales cool slightly before serving. Enjoy them with salsa or crema! 🌌
