I am Pankaj Mathur. An engineer by profession and a food lover by heart. Cooking is my passion. This channel is a voice for that love and passion. After 59 years of my life, I have finally mustered the courage to give a platform to my relationship with food. This channel is for people who want to bring back old memories by recreating recipes that date back to the early 1970s and before. Most of what I know is because of my dear mother Late Mrs. Kusum Mathur. While most of these recipes belong to her, I will try and share some recreations with you all. Hope you all like the recipes as much as I loved preparing them.

Janmashtami Special: Mewa Paag
Hello everyone! Janmashtami is just around the corner and The Mathur Zaika has the most loved recipe for you for this occasion. Mewa Paag is a recipe popularly made during Krishna Janmashtami, made with a lots of dry fruits and seeds. I hope you enjoy the recipe as much as my family and I love devouring it.
Ingredients:
Makhane (waterlily)- 25 g cut into 1/3
Badam Giri- 50 g cut into 1/2
Gola (dry coconut)- 50 g sliced thin Melon seeds-50 g
Green cardamom- 4 to 5 crusted sugar 80 g
Desi ghee 100 g
Procedure:
1. Take a deep pan and add 50g makhana till they’re golden and crisp. Remove once done.
2. Now add the remaining ghee in the pan and follow it up with thinly sliced coconut. Fry them till the coconut is golden brown. Remove once done.
3. In the remaining ghee, add melon seeds and keep stirring till the chattering and cracking sound begins. Next comes chironji into the pan. Fry them for a minute or two only on low medium heat. Set aside when done.
4. Now for a twist, keep some of the mewa aside and add salt and pepper. Mix well and your Namkeen Mewa Paag is ready.
For Sweet Mewa Paag,
1. Add 1/4 cup of water in a pan with 80 g of sugar and keep boiling till it becomes chashni.
Please refer to the video for understanding how to follow the procedure and prepare ‘three-taar chashni’.
2. Now, on low heat, add elaichi powder and all the fried Mewa and mix well using two ladles for proper coating.
3. Remove the pan from heat and place the sugar coated Mewa in a pre-glazed thali. Follow video for proper procedure.
Your Mewa Paag is ready! Enjoy
