Where has this recipe been, of the finest "dense" Chocolate Mousse been hiding my entire life? I had my first chocolate mousse in 1967, when I was 17, at a famous restaurant, Delmonico's, when I moved into NYC as a secretary on Wall Street. It is sublime. This recipe is exactly how I remembered that first chocolate mousse. I have gone through many chocolate mousse recipes, and all were very good, most were very frothy and light, but this is what I have been searching for since those days. You said that this was Julia Child's recipe. If it was, it's the greatest of all of them. I used Lindt chocolate, it's what I had on hand in the freezer, but, Guittard is my favorite chocolate. Thank you.

I worked there from 1998 till 2001, fresh out of school, beginning as a housekeeper and then as the innkeeper's assistant when his beloved wife passed away. To this day, it remains one of the best jobs that I ever had. Baking early (I learned to cook there, from the best), serving breakfast, exchanging stories with the guests, helping them plan their days and find cool hidden gems in the area, lots of cleaning, gardening.....It was a wonderful learning experience and I hope to have my own small inn at some point. So many great memories, and Addison Choate is a really lovely home. Makes me happy to see this!
That's fantastic! It's a special spot with a lot of history and some incredible stories. There's such a positive energy in this 1851 home. Innkeeping is a rewarding undertaking in many different ways and we hope that you fulfill your dream of innkeeping some day :)

2 Sticks Unsalted Butter 1/2 Cup White Sugar 1 1/2 Cup Dark Brown Sugar 2 Cold Eggs 11 1/2 Ounces AP Flour 1 tbs Salt 1 tsp Baking Soda 3/4 tsp Cinnamon 2 Cups Chocolate Chips 1 Cup Toffee 1/2 Vanilla Bean Flake Sea Salt - Brown 2 sticks of butter and put in fridge to resolidify. - Stand Mix Cream, Butter Sugar. - Add 2 Cold Eggs & Vanilla - Combine Dry Ingredients In Separate Bowl and Mix - Add Half Dry Ingredients To Combine and then add remainder. It helps to go in batches to keep gluten down. - Add Chocolate Chips, Toffee and Stir Until Combined ***Refrigerate at least one hour or up to 2-3 days. (this allows flour to absorb all of the liquid in the cookie) - Roll into balls and then break in half and smush together. (this will give the cookie craggly bits and some nice height) - Bake at 350 degrees for 12-17 minutes and then top with flake sea salt to taste. Enjoy!! They are pretty tasty!
