Honey Cake
Honey Cake is easy to make and no electric beaters or mixer needed.This cake does contain white flour, but you could swap it out or use half and half. The brown sugar I used half brown sugar and half coconut sugar. Coconut sugar is still sugar just less refined than white and brown.
Surprisingly not overly sweet.
Remember put your honey in the same measuring cup you had the oil in and the honey will come out easily and won't stick.
Perfect for afternoon tea or dessert at the end of a meal.
NOTE: You will need two loaf tins as the batter is too much for one, it will overflow or use a round tin instead.
Makes 1 loaf
•1 cup of brown sugar
•3 whole large eggs (room temp)
•3/4 cup of neutral oil such as avocado
•1 cup of honey
•2.5 cups of all purpose flour
•2 tsp. of cinnamon
•3/4 tbsp. of baking powder
•1 tsp. of baking soda )
•1 cup of strong black tea from two tea bags (earl grey, english breakfast) can use decaf tea too
•1/2 cup of sliced raw almonds
Preheat oven to 350f/180c
Make the tea and let it steep and set aside.
In a large bowl whisk eggs . Whisk in the brown sugar until smooth. Whisk in the oil then honey and whisk until smooth.
Whisk in slowly the dry ingredients until batter is smooth.
Add the tea whisking abit at a time.
Sprinkle sliced almonds on top.
Divide into two greased loaf pans or a round tin.
Bake for 40-50 mins or until tester comes out clean.

Have you tried using Earl Grey tea? It's fabulous in honey cake. I tend to weigh my honey and oil so I don't have to clean a measuring cup.
Can this be done with quinoa flour?
Yes, it should be fine, might taste a bit different from the quinoa flour but will still be delish.

Good question. I would try , the yoghurt consistency is not as thick as the creamed cottage cheese but it should work.

Not sure as they have different consistencies and you can sub cottage cheese for ricotta in some recipes. Worth a try though

@acupofcoo 0 seconds ago I am no Dr or dietician but the only sugar in it comes from the dark chocolate . There is sugar in lactose from the cottage cheese that is naturally there. Not added sugar. Always check with a health professional, but the sugar in this recipe is low compared to other chocolate mousses
