I have been releasing mainly cooking videos, but this is the first time I am releasing coffee and sweets to go with it,
This is the first time for us to introduce coffee and the sweets that go with it. ☕️
The coffee beans used in this video are espresso blend (medium deep roast) from weekenders coffee, a coffee shop in Kyoto, Japan.
The coffee beans are of high quality and are roasted to bring out the true flavor of the beans, and we have been ordering them from them for a long time.
This time, in order to bring out the bitterness that is typical of coffee to go well with milk, I used a flannel drip method, raised the water temperature, and brewed the coffee even thicker than the rich brewing method, and warmed it with milk.
The caramel nut chocolate we combined this time is a low-GI candy that is safe to eat because it contains no animal products and no sugar, which can spike blood sugar levels. I usually make it with a combination of several different nuts, but this time I simply made it with just almonds and it turned out great!
Cacao mass contains high levels of GABA, a type of amino acid, and is highly recommended for beauty and health, as it is expected to relieve stress and fatigue, improve sleep quality, lower blood pressure, and maintain skin elasticity!
- It is said that excessive intake of GABA in anticipation of its effects may have adverse effects on the body. Please consume about 3-5 pieces of chocolate per day in an appropriate amount 🍫.

⭐︎Caramel Nut Chocolate (approximate storage time: about 1 month refrigerated)
160g almonds
170g cacao mass
☆ Caramel sauce
80 g maple
15g coconut oil
30g soy milk (or cow's milk)
0.4g salt
How to make
1. Roast the almonds. (160℃ for 7 minutes)
2. Preheat the oven to 160℃.
3. Put the ingredients for the caramel sauce in a saucepan over medium heat.
4. Put the ingredients for the caramel sauce in a saucepan and cook over medium heat, stirring constantly, until the sauce thickens.
Bake in a preheated oven at 160℃ for about 17 minutes until fragrant and browned.
5. Melt the cacao mass in a heatproof bowl over simmering water, pour the mixture into the silicon mold up to the eighth filling, and submerge 5 to 7 caramelized nuts inside.

Beans: Espresso blend
Selection: -
Roasting: medium deep roast
Powder quantity: 30 g
Amount of extraction: 50g
Approximate extraction time: 2 minutes and 40 seconds (including steeping time)
Hot water temperature: High (90-95℃)
Milk: 120g
How to make
1. Steam (for about 30 seconds)
2. Slowly brew the coffee (2 minutes and 40 seconds including steaming time)
3. Put the extracted coffee and milk in a pot and warm it.

    I love turnips and think they are an underrated vegetable. However, where I live the green parts are always removed. Would bok choy or spinach be a good substitute for turnip greens? Or maybe another recommendation?

      Thanks for watching the video!☺️✨ I see that turnips are underrated in your country, in my country they are a very popular vegetable and both the leaves and roots are eaten. I think spinach and Chinese cabbage are very good ideas as a substitute for turnips. Spinach is similar to turnip root because it is pre-cooked and squeezed dry, and Chinese cabbage is similar to turnip root because it is watery.🥢 I think daikon radish would require more stewing time than turnip, but if you cut it finer, you could reduce the stewing time!☕️☀️

      I am very sorry for the delay in replying.😭🙏 I understand that you are in an environment where Japanese foodstuffs are not available. I have tried to think of alternatives to fu(wheat gluten). The first one is to make fu(wheat gluten) instead of changing it. I found a Japanese website that shows how to make fu, so I am attaching the URL! The second method is to buy tofu if you can get it and freeze it as it is in water. You can either open the bag of stiffly frozen tofu a little and place the entire container on the microwave to warm and thaw it, or thaw it naturally as it is. After that, squeeze out the water from the tofu and it will become spongy, so it can be used as a substitute for fu(wheat gluten).       Hello! Thanks for your message! Do you mean if there is leftover frying oil that can no longer be used? There are two ways I dispose of my fried oil. 1) [Method using paper packs] Let the deep-fried oil cool down thoroughly. Tear newspaper into small pieces and put them in the paper pack, add water to soak it up. Pour the oil into the carton and soak it up. Close the mouth of the carton and tape it tightly. You can also use paper towels or rags as substitutes for the newspaper. Soaking the packet with water will prevent spontaneous combustion. When the oil is hot, add the amount of oil coagulant as indicated on the bag and mix to dissolve. Allow the oil to harden. If the oil has cooled down, let it warm up to the temperature indicated on the pouch before adding the oil coagulant. Remove the solidified oil from the deep-fat fryer using a spatula or similar tool to separate it, place it in a plastic bag, close the mouth of the bag, and discard. Reference! My mother in law has some veggie fields and we're lucky to get veggies often from her. It's so different than what you can buy in Germany!

    Yum! I very much want to try the tomato steak and chicken with radish dish! I am growing perilla in my garden this year for the first time. It is hard to find in stores where I live and I miss the flavor. The plants are small now, but I look forward to eating them soon! 😊

    This makes me feel so nostalgic! About 10 years ago when I was in college, I studied 1 semester in Hakata, Fukuoka. I spent a lot of time in izakayas (too much, probably😂). Chicken wings were always good, but my favorite was tako wasabi.

I recommend the following vegetables: daikon, onion, and leek.🧅 Other ingredients are all Japanese, but I think deep-fried tofu, taro, yam, and konnyaku would also go well with this dish!
