    The important thing to remember is that the cooler must have a fan that runs constantly. Some coolers do not have a fan built in, so you have to place a fan in the cooler. Air circulation is just as important as temperature and humidity.

      Apply slightly higher analog gain and then compensate for it with digital trim has, at least theoretically, some benefits, like (1) making full use of the A/D's sampling bit depth (2) increasing S/N ratio. However if you did this too much and caused clipping, all the benefits would be pointless and trashed.

    음료 냉장고에다가 구축하려면, 장비가 몇가지가 필요한가요?

      다른 장비는 특별히 필요는 없지만 먼저 음료 냉장고가 fan방식의 공기 순환이 확실히 괴는 방식인지를 확인하셔야 합니다. 그리고 굳이 필요하다면 고기 받쳐 놓을 틀 과 히말라야 소금 정도.... 온도와 습도를 꼭 유지 관찰하셔야 합니다. Good luck...

      @@Joker_orignal 먼저 냉장고 냄새를 베이킹소다를 몇일 동안 넣어서 완전 제거 하셔야 합니다. 아니면 육향에 침투해 고소한 치즈 육향을 놓치실 수 있습니다.

      네 스프의 육수 내릴때 쓰셔도 되고 갈아서 햄버거 패티에 같이 넣으시면 식감에 좋죠... 하지만 90일 이상 에이징후에는 너무 굳어서 버리시거나 갈아서 개사료에 쓰시는 분들이 많죠.

      @@열사복쇠 방구석램지가아니라 냉장고는 전문저장고랑 다르게 온도차의 변화가 심해서 자칫 온도가 높아지면 미생물 번식위험이있어요 숙성이아니라 부패가된다는 거에요 더군다나 덩어리 지육을 쓰는게 아니라 저렇게 사람 손 거쳐서 소분한 고기는 미생물 오염도 심하고 저렇게 촬영하시면서 말하시면 미생물에 더 심하게 오염되겠죠?

      일반 냉장고라면 차라리 wet aging이나 koji rice숙성 방식을 추천합니다.

    I’m just curious... would using pink Himalayan salt blocks and stacking them to form walls work better than just medium coarse ground salt in the bottom? I see some lockers with both and I’m trying to weigh the pros and cons of one over the other.

    놀라운 공연이군요。예전 북은 무거워 여자가 매고 춤출 것이 아니다. 각 사람이 전선 1척이라 보면 된다. 각 전선이 각 방향과 적선에 맞추어 움직인다. 예전 북춤에 수군 쾌자 입고 패립모를 쓰고 공연하는 화면이 있던데.

    드라이 에이징하면 드라마틱한 맛의 변화가 있나요? 가령 한우 2등급이면 원뿔의 맛이 날수있는건지요?

      드라틱까지라면? 글쎄요... 일단 드셔 보시면 일반 비숙성육과ㅡㄴ 확연한 육향과 육질을 느끼실 껍니다. 3등급을 2등급의 향상은 가능합니다. 1등급은 그냥 드셔도 좋습니다. 2등급의 숙성을 추천합니다

    보통 음료프리저는 4도씨인데 이럴경우 어떻게 해야될까요? 0-2 사이로 안내려가게되어있던데

      그럼 온도 유지가 되는 다른것으로 필히 바꾸셔야 할듯 합니다. 온도는 매우 중요합니다

      @@K쿠쿠쿠쿠 온도가 40도 이상이면 당연히 부패할겁니다. 절대 32-36를 유지하셔야 합니다. 고가의 장비는 이런 온도와 습도를 자동으로 조절하기때문이고 사실 제가 느끼기에도 너무 비쌉니다

    굳이 저런 비싼소금을 드라이에이징 하는데 써야하는지는 모르겠어요 소금의 역할은 단지 수분 잡아주는거에 그치는데 근데 음료냉장고로 에이징하는건 생각도 못해봐가지고 좀 신박했음

      You guys don’t pay attention! Watch the whole Video!! It went up to 41 because he opened the door!! Don’t just skim through the video watch the whole thing!! JOHN KIM... you did an excellent job!! It’s looking good! Just make sure you rotate the pieces of beef ... because it’s colder next to the back of the unit with the ice build up!

    냉장고에 습도가 40%정도밖에 안되는데 여기에 드라이에이징 진행해도 될까요?

      이승원 괜찮을 것 같은데요... 일반벅으로 냉장고의 습도는 50%-60% 유지되는게 일반인데.. 혹 냉장고가 크고 비어 있다던가 아니면 fan이 크고 센것 같은데... 물 한컵 정도 같이 넣어도 나쁘지 않을 듯 합니다. 스테이크의 상태를 좀더 자주 관찰해야 할 듯 합니다.

    Bueníssimo! Para controlar la humedad usted solo utiliza la sal? Este cooler mantiene la humedad constante?

      Sal es por un poco de ayuda para humedad pero mucho para desinfectar el ambiente el la cooler. La sangre se caye el sobre sal y seca su mismo. El humedad se controla por ventilador de cooler no por sal.

    에이징 중 소금을 갈아주거나 하진 않으셨나요??다른영상을 보면 소금에 수분이 많아서 말리고 갈아주고 하던데 어떤지 궁금합니다
