To prepare Khasi ko Bhutun, start by thoroughly cleaning the goat intestines in warm water with salt and turmeric to remove any smell and impurities, rinsing several times until clean. Boil the cleaned intestines in water with a pinch of salt and turmeric for about 15-20 minutes or until tender, then chop them into small bite-sized pieces. Heat mustard oil in a pan until it begins to smoke lightly, then reduce the heat and add fenugreek seeds, letting them turn dark brown. Add sliced onions and sauté until golden brown, followed by garlic and ginger paste, cooking until the raw smell disappears. Stir in the boiled and chopped intestines, frying for about 5-7 minutes on medium heat. Mix in turmeric, cumin, coriander, red chili powder, and salt, then cover and cook for 10-12 minutes, stirring occasionally. Add chopped tomatoes, cooking until soft, then sprinkle garam masala and mix thoroughly. Finally, cook on low heat for another 5 minutes until the oil separates, and garnish with fresh coriander leaves before serving.
