I was born and brought up in Cork and never met anyone who eats this stuff! I mean, yes, I do know that people eat tripe - _even_ people who aren't from Cork! Although it's probably worth bearing in mind that 'tripe' is a well known byword for 'rubbish'! But I've never met anyone who's eaten drisheen more than once. Even my dad, whose best mate worked in a slaughterhouse and would 'gift' him stuff known otherwise only to vets and biologists, only ever managed to choke down one forkful of this awful gelatinous stuff! And yet _someone_ is buying it! I think you have to be like the Cork version of a Cockney, born and raised in the tract of land between Shandon and Fair Hill! Either that, or it's the Leeside equivalent of that 'fermented', ie, 'buried in the sand and allowed to rot' shark - meat that Icelanders serve to tourists as a way of pulling their leg!

Having cooked them, glaze them with honey and mustard and shove'em under the grill to brown and crisp up. That's how my mother used to do them when we were children back in the 1950s. Teriaki sauce glaze would be a good modern variant as well. Modern in the sense that it wasn't known to us in mid 20th century England.
