MÜCANDARA - Popular Pilaf & Green Lentils dish packed with nutrients and tons of flavour!
MÜCANDARA - A popular Cypriot Pilaf and Green Lentils dish packed with nutrients and tons of flavour!
Ingredients:
1 glass/250g of green lentils
1 glass/300g of white rice
1.5 Lt cold water
6 halved and sliced onions
1 tbsp mixed herbs
90ml olive oil
salt and black pepper
Method:
Rinse the green lentils under cold water then transfer to a pan, adding 1.5 lt of cold water. Cook on medium heat for 30 mins or until tender. After 30 mins, drain the water but do not discard as we will be using it to cook the rice. Set the lentils aside.
Whilst the lentils are cooking, cut into halves then slice the onions. In a large pan, heat approx. 35ml of olive oil and saute onions. Sprinkle approx. 1/2 tsp of salt to the onions and stir continuously until they are golden, adding a further 55ml of olive oil, up to a total of 90ml. When the onions are golden in colour, add the washed rice and mix in. Ensure all the rice gets covered with the oil then add the seasoning. Adjust to your taste. Add the drained green lentils whilst keeping the heat on low and gently mix to combine. Drain 800mls of the lentil juice a second time whilst pouring into the rice. If necessary, make up with boiling water. Cover and allow to cook on the lowest heat setting for approx. 20-25 mins or until the water has absorbed. Do not allow to become too dry as the rice should still be slightly moist when you turn off the heat. Leave to rest for a few minutes before serving with plain yoghurt or a freshly prepared side salad.

Malzemeler:

Yaklaşık soğanlara 1/2 çay kaşığı tuz ekleyin ve altın sarısı olana kadar sürekli karıştırın, toplam 90 ml'ye kadar 55 ml daha zeytinyağı ekleyin. Soğanlar altın rengi olduğunda, yıkanmış pirinci ekleyin ve karıştırın. Tüm pirincin yağla kaplandığından emin olun ve ardından baharatları ekleyin. Zevkinize göre ayarlayın. Süzülmüş yeşil mercimeği düşük ateşte tutarak ekleyin ve birleştirmek için yavaşça karıştırın. Pirince dökerken ikinci kez 800 ml mercimek suyunu süzün. Gerekirse kaynar suyla tamamlayın. Üzerini kapatın ve en düşük ısı ayarında yaklaşık 20-25 dakika veya su emilene kadar pişirin. Çok kurumasına izin vermeyin çünkü ateşi kapattığınızda pirinç hala hafif nemli olmalıdır. Sade yoğurt veya taze hazırlanmış bir yan salata ile servis etmeden önce birkaç dakika dinlendirin. Afiyet Olsun!

So you add cold water to the top teapot that holds the tea? And then you turn the boiling water in the lower teapot on a low heat? Wouldn't the tea get very bitter if I leave the tea leaves in the top pot in there for 15 minutes?
Hi thanks for watching. When made like this the results are a great glass of Turkish tea every time! 😊 You can adjust how much tea to water you use in the glass according to taste.

Hi, thank you for your comment. The teapot in the video was purchased in Turkey but you can get them from most Turkish supermarkets.
The amount of garlic you added is too much for tzatziki
The amount of garlic used is purely personal preference according to your taste ☺️
