Our food is full of richness, goodness, and taste of the Mediterranean.
We use only fresh ingredients and cook everything from scratch. We enjoy cooking, eating, and sharing our dishes. Our real happiness is when we invite guests over and they enjoy Mediterranean food.
The spices we use are primarily oregano, basil, and rosemary, and we flavor the food with onion, garlic, lemon, and olive oil.
Come fill your home with aroma of the dishes from the lands around the Mediterranean Sea, especially Greece, Egypt, Turkey, and Italy! If you can't travel to the Mediterranean today, the next best thing is a meal prepared from Nancy's recipes. Enjoy!

Stuffed Peppers and Tomatoes “Gemista” with Meat

This has to be one of everyone’s all-time favorite Mediterranean dishes, especially during the winter time. In this episode, I am showing you the Greek style of stuffed vegetables, which is baked in the oven and topped with feta. I’m using a baking dish covered in foil for this episode, and in the future I’m planning on showing how this looks in a cast-iron Dutch oven.
Plan on baking leftovers to enjoy over a couple days because the flavors in this dish blend and age well in the refrigerator.

*Ingredients*
► 4 bell peppers, hollowed and cleaned out
► 1 tomato, hollowed and cleaned out
► Tomato sauce: 6 tomatoes blended with 2 tbsp tomato paste. See my episode on Basic Tomato Sauce: th-cam.com/video/0CrlucC0aUI/w-d-xo.html
► 1 tsp sugar (the secret ingredient for your tomato sauce)
► 1 potato cut into wedges
► 1 lb ground beef
► 2 tbsp butter
► 2 tbsp olive oil
► 1 medium chopped onion
► 3 cloves garlic
► 1 cup chopped parsley and dill
► 1 cup soaked rice
_Spices_
► 2 tsp salt
► 1 tsp oregano
► 1 tsp black pepper
*Directions*
_Prepare the stuffing_
► Heat the oil and butter in your skillet on medium, and add the chopped onions
► Stir and sauté the onions until they become translucent
► Press the cloves of garlic into the mixture
► Add the ground beef and brown it until it releases some of its water
► Mix in the soaked rice, spices, and half of the tomato sauce
► Simmer for 10-15 minutes
► Mix in the parsley and dill, and let it cool a bit
_Stuffing the vegetables_
► Preheat your oven to 400 degrees F.
► Fill 3/4th of each vegetable with stuffing, leaving some space for the rice to expand. This will usually be about 4 tbsp of stuffing per vegetable. Cover each vegetable with its cap.
► Insert the potato wedges between the vegetables
► Pour the remaining tomato sauce onto the vegetables
► Sprinkle 1 tsp sugar onto the tomato sauce
► Cover tightly with wax paper and aluminum foil and bake at least one hour.
► Top with feta (or parmesan) cheese when serving.

Hi, thank you for your comment. Most Egyptians cook it without meat, but there are a lot of families who cook it with meat. I grew up to eat it with meat, and it's delicious.

However , traveling allows Me to make without the mixer or immersion blender. However , turns out exactly like Ice Creme' : ) The question is , what does Mastic tastes like ? There is a Specialty Spice shop nearby that I havent ventured to yet ?? I havent heard of before , and I really appreciate Mediterranean cuisine. It sounds Medicinal as Sasperilla , or Anise , a Liquorice flavor ? The same as the Italians Spumani ? ( I think I spelled It correctly ) I made : a Mocha Bourbon Rocky Road , a P&J , a Strawberry & Marshmallow , an Ambrosia one , & a nomock PineApple Sherbet , so far. An Inlaw from The South , U.S. used to make Ice Creme all the time. 🩷🤍

Very nice. I like my pougouri with beef stifado and natural greek yoghurt. Best thing is the mix of flavours, textures and even temperatures (with everything hot except the yoghurt). It's what I'd cook if I was a contestant on masterchef.

why 45 minutes in the oven everything was already cooked before???
Great question. In order for everything to blend together and the liquid bachamel tp thicken up and get the golden brown color, we need to bake everything for 45 minutes.
