Here's the recipe:
Ingredients:
4 egg whites 2 tsp mixed spice
600ml cream (20oz) 1 tsp nutmeg
3/4 cup icing sugar 1 tsp cinnamon
1/4 cup slivered almonds 1 Tablespoon vanilla essence/brandy
1/2 cup sultanas 1/2 tsp almond essence
1/2 cup raisins/currants 2 tsp cocoa powder
1/4 cup mixed peel (optional)
2 tsp hot water 1/3 cup glace cherries
Method:
1. Combine fruit with brandy/vanilla essence and spices, and stand overnight.
2. Whip cream with icing sugar.
3. Whip egg whites until stiff and fold into cream.
4. Mix hot water with cocoa.
5. Fold slivered almonds, fruit mixture and cocoa into cream mix.
6. Pour into bowl or deep tray and freeze overnight.
