I find it difficult to identify the 3 when they are 35cm-ish (chum, coho, chinook). Reg’s allow for 2 of the 3 where I am. Definitely don’t want to pull a small chinook in error!

Wrong. First you should describe the top/bottom identification. Then come in opposite the hinge, the shell is very thin and easy to pierce. The blade then slides under the oyster and slices the bottom shell attachment and a quick flip up levers the bottom shell away. Slice the meat from the top shell and, with a little practice, you have no waste, no flapping meat. Source-was a pro oyster guy back in the day (nods to Dizzy if you’re around).
