First week back at uni after the break - we went to a flower farm!!
Join me for another week in my life as a full time uni student, and a go to yummy student budget recipe!
Creamy Tomato Pasta Recipe:
Ingredients:
- 500g pasta
- Olive oil
- 1 Whte onion, finely chopped
- 3 garlic cloves, minced
- 120g tomato paste
- 1 can of italian style tomatos
- 1tbsp chilli flakes
- 200ml full cream
- 1/4 tsp black pepper
- 1/8 tsp salt
- 1 tsp dried herbs
- cheese
- Fresh basil to garnish (optional)
Instructions:
1. Cook your pasta according to instructions, reserving roughly 50ml of pasta water for the pasta sauce later
2. Heat a pan on medium heat and pour in the olive oil
3. Cook the onions until they become slightly brown and translucent (5-7 minutes)
4. Stir in the minced garlic and sauté for about a minute
5. Then add in your chilli flakes and tomato paste, and cook for another minute
6. Stir in the cream and let simmer for 2 minutes
7. Season the creamy tomato pasta sauce with black pepper, salt and dried herbs. Add the cheese and stir.
Taste and adjust to your liking!
8. Add in the cooked conchiglie shell pasta, along with
20ml of pasta water. If you would like your sauce to be less thick, add in more pasta water.
9. Once you pasta is coated in the tomato sauce, remove the pan from the heat and serve up! Garnish with fresh basil, extra chilli flakes and additional cheese!
