What a beautiful place, I have never ridden a mountain bike before. I did try a road hand bike before. Did you try both and go with the mountain bike one or did you get it to suit where you would be traveling to? Great ideas on the electrical winch and the pulley if the electric one failed.

As a quadriplegic myself I have admiration for your courage, resilience, self reliance, and perseverance. My cousin purchased a city transit bus and is currently in the process of making an off the grid rv out of it so we can do some traveling. I hope I get the opportunity to bump wheels with you.

When things become challenging, I often say "why do things have to be so difficult?" However, you seem to face each new issue head on, using your innate intelligence, experience, knowledge, and wisdom to work around everything that presents as a barrier to the task. I would find each extra little step necessary so frustrating, but the joy you show with the !YES! Is awesome to see. It is ability not disability that helps you push forward, at least from my perspective.😊

All the above but I don't think anyone said broccoli cheddar soup. I've also heard that berries and cheese are good together and there are actually cheesy desserts you can look up. For me personally eating too much cheese it's not a good thing as I have a sensitivity to milk products. Feta seems to be the exception though 🤔
