Yes you can macerate your strawberries over night, I cut mines up last night and poured some sugar over them only for my 3 year old to drop the entire bowl onto the floor about 10 mins ago trying to get a cheese stick from out of the fridge.luckily I have a extra container of strawberries left over.start all over again but will let them sit for about 30 mins
Also instead of the cup cakes I used dessert shells

Use a piece of parchment paper and then put each color side by side. Roll the parchment up, cut the end off and put in your piping bag :)

They won't get soggy, if anything put a little bit less strawberries and the cake will be moist.

You can make it the night before but I would cut strawberries in the morning.

No 1 tbsp. It's also equivalent to 3 tsp.

For the excess foam sticking out (if it’s not wanted), you could take an exacto knife or box cutter and cut it even with the tops of the candy boxes . I suppose you would have less area to work with for the tissue paper, though, but a more even look ....
