Just saw this video. I make mine a little different. I do diced potatoes not fries and I fry up some tiny diced ham. Put down the home fries and diced ham cheese then eggs and hollandaise sauce. You can also top with crispy bacon bits

It’s a visual thing- some people like it thicker, some thinner. I wasn’t to make sure it’s always crispy and lightly coated. Test one and then adjust
