Chicken on a Meat Hook
Lets cook chicken over the fire using our fancy new meat hook! A toy Ralf purchased for us over the winter finally gets its time to shine! We start by cooking something we have made many many times, chicken over the fire!

I made it in a video!
I would use a post it note for my pattern and I would use it above the pick I’m working so i could see how the current pick will line up with the previous picks. You have no reference if you are looking at picks that don’t yet exist.
That's a great idea! I never thought about being able to look back instead of forward!
Ikr? I do that on all my patterns such as knitting. It’s just confusing to compare the row you’re working with a row that isn’t there. Comparing with the previous row gives you a view of where your color will line up with what’s already there. Glad I could help!❤

I cook with barley at home a lot, and I just cook the same way I cook brown rice. Takes a little longer than white rice, but it has a good texture after the timing for brown rice. Maybe that's just quick-barley, idk
I think you might be onto something Chief, in your previous video I mentioned about how normally vikings used oats for animals less in bread making like Romans or Greeks or what we traditionally know as bread. Since you weren't liable to take your stone quern with you it's likely they used Oats more when they traveled. However, I'm still not sure about the barley, given the location water would probably not have been all that hard to come by, given how they traveled. So I could see them using more boiled means, they could easily put a pot on during the day or even throughout the night and still have things 'warm' in the morning. Often times the morning meal was left overs from the night before. I would be eager to try the barley precooked and then tossed in with the bacon and shallots. Great conclusion. That's why quick barley is the most common barley in stores. Nobody has the time for barley.

So when I researched breads in Viking era, I found that most of the time the oats were used for their animals and barley was the main staple grain found in not only Birka but all over. Most of the cooking I found around the Viking age as done either over long pans over the fires or in bots and cauldrons. So with the absorption of water would be more geared towards your barley. If that helps with why they did a bit more with barley vs oats. - Ragna <3

Adding grains to the oils like the bacon grease before adding the water is similar to how Risoto is made. I didn't ever consider cooking poridge this way. I like it and I'll try it for sure.
If you do be sure to share your results with us! I'm pretty sure I got the general idea from the Ribe Center but I honestly didn't go back and check how they did it until I went to grab the website for the video.
I miss the impromptu History lessons by the cooking fire. I can't wait till next time.
