Diagnosed with gestational diabetes in my first pregnancy in 2017, I became obsessed with gathering data about my own blood sugar and with what I was feeding my kids. Research said that due to my condition, my boys and I were now at an increased risk of developing diabetes earlier in life.
Since then, I've calmed down and am now able to approach our entire family's health in a more balanced and convenient way that fits into our routine and lifestyle. It's not about perfection but progress, and my belief is that even one meal approached with an intentionality is better than none.

A little bit about my blood sugar journey... I was told I was insulin resistant in 2017 after a glucose tolerance test my reproductive endocrinologist ordered for me when I was having trouble getting pregnant. And after conceiving, I was diagnosed with gestational diabetes very early on. Since then, I've been diligently learning about blood sugar dysregulation and gathering data through constant finger pricks and CGM experiments since I am now at greater risk for developing Type 2 Diabetes in the future. I've learned A LOT about what works and doesn't work for my body, and how my body responds to different foods. I hope this video helps you on your path to a healthier lifestyle!

You cannot compare the weight of toast to the weight of fresh bread. The moist content of toasts is lower, so the relative carb content of toast is higher, hence the higher glycose spike after eating toast.

What affect does cinnamon have on your glycemic response to oatmeal? It is supposed to moderate the glucose response. Use cinnamon and a tablespoon or two of heavy cream for fat? Just an idea.

Hello from Ontario, Canada. I've been recently been diagnosed with Type 2 diabetes and am on a quest to garner as much knowledge as I can to stabilize but preferably reverse this diagnosis. Brown rice only has 1g of fiber. Just eat rice after 12 hours in the refrigerator and take a walk.
I just watched a video promoting vinegar for diabetics and she said the benefit is that it shows down the process, so that you don't get spikes. That was true in your account video.

What is the sourdough, white or Whole Wheat
Have you ever experimented with resistant starch? If I feed my husband mashed potatoes, his blood sugar will spike. But if the potato is cooked and cooled before eating, it has minimal impact. That is known as resistant starch. I typically make potato salad, so that the potato is cooled and it is eaten with egg (good protein and fat source), but I think I'm going to try it with just the potato. I might try twice baked potato.

Maybe you're starving because that's not a meal with nutrients.
You are not diabetic yet. You're still pre-diabetic, so it doesn't show accurately for people who are fully diabetic already.
