The Piezano | Can a $99 indoor oven make good pizza?

I cook two pizzas at the same time, with the same ingredients to see if my upgrade to the Gozney Arc XL was actually worth it. Ever since I bought my Gozney, i've been wondering if I am actually making better pizzas or if it was just in my head. dedication cooking out in that weather! I remember the third time I was making some pizzas I came in with the pizza on the peel too quickly and ended up with a wall-za just like that. Those pies at the end looked awesome though :)
@@paulhealy9413 Did you still eat your wall-za? I still ate my floor-za, the floor added a nice earthy flavour to it. Just gotta laugh in those moments!

Hey Alex, another great vid! If they figured out the top element it would be a winner in my books. I’m doing some Canadian mozzarella research at the moment, trying out a few Saputo varieties … still haven’t found my perfect mozzarella.. what brand so you use?
When the video is at 20 views and you get a comment, it means the world. Thank you! I’m using galbani for soft moz, it’s decent. When it comes to the harder stuff I’m also not in love with anything, I just use TreStelle as it’s readily available. You’ll have to let me know what you settle on.
Man, how do you make a dough that take off like that ? Each time I do one they're too hard, white and way too sticky...
@@tempofugo168 to reduce stickiness you want to coat your dough balls in flour. I use fine semolina flour. To add some colour to your dough if you’re cooking in a regular oven, you might want to try adding some olive oil and sugar.
Would be nice to have a rotating turn table on the gozni to get even crust browning
Why would they taste different. Same ingredients same fuel source. Just cause you pay more doesnt guarantee better pizza

I have been so lucky to actually try Alex’s pizzas, and I can honestly say 10/10 for pizzas and 20/10 for wholesomeness. You can taste the passion that goes into making these pizzas and they are so incredibly delicious! 😋❤

i stopped using bread flour and type00 for Pizza making. AP flour is just way better texturally and also has more flavor. I have no idea why bread flour is seen as better by most people. I know why type00 is popular for hot oven because it doesn't burn as fast. With temperature control you can make it work, and you'll end up with a superior Pizza.
Interesting, I actually prefer bread flour. Specifically strong, high protein flour. It just gives a deeper flavour that I don’t find with 00. I have never cooked a pizza with AP flour, I’ll have to give it a try. Cheers!

What do you think from your experience about Gozney? It's not approved for a pizza by the AVPN, what is the issue? What is wrong?
I currently have a small Ooni Fyra 12, but I’d love to upgrade to the Gozney Arc XL-not because I expect any difference in taste, but because of its design advantages. The Arc XL has a larger opening, which makes it much easier to monitor and turn pizzas during cooking. More importantly, the bigger opening and added features open up possibilities far beyond just pizza. The Fyra 12 can only accommodate a very small grill pan, and its temperature isn’t adjustable. With the Gozney's front temperature control and the larger opening, you could bake bread, grill vegetables, or even cook chicken and steak. It’s far more versatile for a wide range of cooking needs.
The large opening is a huge advantage, it’s also meant I’ve burnt far less pizza because I can see what’s going on. If you do get a Gosney, I’d recommend getting a baffle door, especially if you live in a colder climate. It allows the oven to get up to temperature much quicker.

As for the hot and cold slices, if the oven is cooler, it will maintain more moisture in the dough, therefor keeping it warmer for longer. the more HEAT the DRIER the pizza will become and the quicker it will therefor cool down.

One test that you should try is how many pizza can you make out of the ovens and how fast. I have a Gozney dome (dual fuel) and my friends have the S1 and another has the arc XL. The domes are better for larger parties as I can keep making pizzas without having to worry about the oven keeping the heat. I also like the dome over arc|XL for the same reason and they have more space. I also make other things in my Dome with charcoal and wood such as fish and meats. BUT if budget is a concern the $200 oven will do for light home use and is better then an electric home oven.
it seems like as long as the oven is good enough the thing that really makes the different is the cook itself.

Thanks for the video, I'm guessing you could just use the metal peel and just pull the whole pie out a bit and turn it instead of trying to turn it inside the stove, work smarter not harder. 😊
Not sure why it would make a difference, since the ingredients are the same and you should know your ovens well enough to make the necessary adjustments to obtain the best end result… 🤷♂️🙏
