So funny about Luna - I came here looking for people canning using pearl luna jars! I’m trying to discover if they work for pressure canning because the gaskets and lids(separate) are reusable. Tops are stainless steel so should be good. European so maybe expensive for you all, I’m sorry. But your ball jars are expensive for us! The best outcome for me would be interchangeability between ball and pearl. Well, if you can keep cats 27yrs you’re doing lots very well.

It's pronounced "wooster" sauce. Really: Lea & Perrins "wooster" sauce. From the city of Worcester ("Wooster") in Worcestershire ("Woostersheer"). Oh, and the steak is "Solsbree" - another English city with a wonderful cathedral. 🤪
Or not so much Wooster as wuhster? As though you’re just trying to say the sound of the letter W. With an uh vowel, but then add a bit of an o. Wish I could embed a sound file for you!

Canned foods are generally good for several years as long as the seal stays intact. Nutritive value may start to deteriorate after about the one year mark.

Stay at ilani and pay $500 a nite for a hotel to play low return slots and limited casino games, and see washed musical artists, when you can stay in Vegas for less and see current stars, play better slots, a full variety of casino games and get free drinks.

You’re welcome! My Fresnos are only about 2 inches tall right now. You must live in a warm climate to already be waiting for your peppers to ripen. Let us know how your sauce turns out.

I don't have garlic cloves but I do have garlic powder. Will that do?
I think garlic powder would be completely fine.
I don’t have a steam canner. I have a pressure canner. It has a setting on it to steam . Not sure how to use that. I love hot sauce. I dry peppers and make a variety of chili powders. Today I made jalapeño chili powder. I made a mixed chili powder with five kinds of dehydrated peppers. Very delicious. In have made Cayenne chili powder. All kinds. I haven’t seen Fresno peppers in Walmart. But jalapeño peppers. I buy dried peppers at Amazon for chili powder.
You can water bath can for the same amount of time. I originally found the Fresno peppers in Albertsons. I saved seeds from one pepper and now grow them. I’ve never made chili powder, only pepper flakes. Sounds delicious.

Thanks! Steam canning is not necessary unless you want a shelf stable product. You can just put into jars after straining and it will keep about 3 months in the fridge.

How long will this last in the refrigerator?
We’ve had the hot sauce in our fridge for 6 months with no issues, but I think the common advice is 3 months. One of the main ingredients is vinegar which helps preserve it. We’re getting close to harvesting our cayenne peppers, which we’ll be using this year in this same recipe. Stepping up the heat.

Thanks! If you ever get a chance, I’d encourage you to go. It’s one of the best salmon fisheries in the northwest. We used Hookin it Up guide service and he worked extremely hard to try to put us on the fish. He would have stayed out until dark but we were tired and called it a day.

It was the only day of the year so far that the bite was off and the fish were scattered. I caught a small native coho.
