Quiet Moments: reflections & slow living between Christmas & New Year
Join me for quiet moments between Christmas and New Year's Day. From making mom's holiday breakfast bake to brewing tea in my new DeLonghi kettle, these are the gentle rhythms of late December. Featuring cozy morning routines, Italian pandoro traditions, kitchen updates, and reflections on the year ahead. A peaceful look at the transition from holiday season to new beginnings ✨
Breakfast Bake:
tater-tots or hash-browns
your choice of vegetables (peppers, onions, green peppers, etc.)
bacon or sausage
4 eggs
splash of milk
salt & pepper
Bake the hashbrowns in the air fryer for 7 minutes, then add meat and bake 2-3 minutes.
Mix together the remaining ingredients with the eggs and whisk until combined.
Pour overtop the hash brown mixture. Bake again for about 7-10 minutes.
Enjoy with orange juice for a refreshing meal.

Had this in Korea last week. What is the leaf on top of the lettuce. Quite bitter to my palate. I want to make this at home.
Thank you for watching! The green leaf is perilla leaf or Kkaennip (깻잎) in Korean. When I first tried it, I also wasn't a fan. It is definitely an acquired taste. I hope you can try making the bulgogi at home. It is really easy and delicious! Enjoy~

But did you know it can also make a tangy, sweet, and crunchy side dish? And did I mention how simple it is to prepare?! Kimchi Soy Sauce Noodles 2 green chilies (청양고추) 400g fermented kimchi (묵음지) 5 tbl. soy sauce (간장) 2 tbl. sugar (설탕) 2 tbl. perilla oil (들기름) Ground sesame seeds (깨소금) 1. Thinly slice green chilies 2. Rinse kimchi to remove excess sauce. 3. Dice kimchi into bite-sized pieces. 4. In a bowl, mix together sugar and soy sauce. 5. Add diced kimchi to the soy sauce mixture. Mix well. 6. Boil the noodles. About 3 minutes. 7. Drain noodles and rinse with cold water. 8. Place noodles on a plate. 9. Top with soy sauce kimchi mixture. 10. Top with green chilies to desired spiciness. 11. Enjoy!
