I do enjoy the opportunity to share ideas about food, as I find food very bonding and enjoy the sharing, learning. I'm not the cleverest and enjoy simplistic and affordable ideas.     Oh I meant to ask if you have an air fryer? I heard that they can be used instead of an oven. I don't use my oven either because it overheats my apartment. The air fryer has been nice.

    1) Something I always cook this time of year, but not single serving is pumpkin stew since Halloween is pumpkin season. Core and skin a pumpkin and cut into 1 inch chunks, add to a pot with canned yellow corn, chopped onions, a stick of butter, salt and pepper, chicken broth and Spam cut into 1 inch chunks. Adjust corn, onions and Spam according to the size of the pumpkin used. Simply simmer it until the pumpkin is tender since everything else is already cooked. I make mine in a large canning pot and it only lasts for one meal after everyone gets second and third servings. 2) another budget meal I make is Spam fried rice. Dice the Spam or hotdogs into 1/4 inch pieces and fry add cooked rice and fry more, use seasoning packet and peas, or a can of seasoned peas, once toasted you can add can of Chinese vegetables or simply long sliced celery instead of bean sprouts mix. Options like scrambled egg, onions, ... Can be added if not using Chinese vegetables. 3) another budget meal is grated zucchini mixed with the crabcake recipe on most seafood seasoning, substitute zucchini for crab and spoon into cupcake pans and freeze. Once frozen, pop out of the pan and fill a Ziploc bag full and keep in freezer until hungry, pan fry while frozen and as it cooks it melts into patties, serve on crackers or roll with mustard. 4) Hobo beans. 1 lb of browned ground beef, 1 can yellow corn drained, 1 can of baked beans. all mixed in pot until hot. I buy a lot of markdown meats and freeze until needed. One of my favorites is raw Italian sausage, after removing the casings they make good burgers and great sausage gravy. They also after browning up and mixed with ricotta cheese and egg to stuff shells or make lasagna on a budget.

      @@frugallydelicious I got a “used” toaster oven on Amazon for $29. It looked brand new. Doesn’t heat up my studio apartment. I’m in Southern Arizona, so not heating up the place is very important here!

      I gotcha! I think a spicy mayo would be a great substitute! You can buy a spicy mayo in the store in the condiments section or make your own. I've never made a homemade spicy mayo, but there are a lot of easy recipes online. 🥰😊

      Also, tip for using all of a fresh lemon...grate the skin first, and you can freeze it in a little container and add as you use lemon at home. That way you always have it, and it is easier tongratr before juicing

      And last message...I cook with quite a bit of nutrional yeast, accidentally buying 500g on Amazon (it is so so so much, it is a very light ingredient....) I sprinkle it on popcorn as a cheesy topping (great for b12), and often use it in place of parmesan in pesto (so I can serve to vegan friends). I've always added it towards the end of a dish, maybe also save some to sprinkle at the end?

    I love your creative way of making budget meals. In the last year I discovered lentils. Oh my! So tasty and nutritional. Most of the time I have the items you show in my kitchen already. I have made so many of them. I have never used nutritional yeast. Love your humor and personality.

    Or maybe make a cold pasta salad with the tortellini, tomato, avocado,, s&p and a little oil? Plain Greek yogurt would've offered a few more options as a sour cream for potatoes, mixing with the mashed advocado or for a creamy tortellini soup or a creamy tomato dressing for a cold pasta salad. 🤷🏼‍♀️

    Adding avocado to hot food isn’t the best, because heat turns avocado bitter. I think the tomato, oil and lots of freshly ground pepper would be a better dressing for the tortellini

    My mom puts in a can of diced tomatoes, polish sausage, ground beef, mushrooms, and a tablespoon of sugar and a tad of butter.

    When you make meatloaf or meatballs, you make a tiny bit and microwave it (or cook it however you want) and taste for seasoning. That way, it's safe, and you also know if you need to add flavor
