If I want to start compotition bbq how do I start
First off find out what sanctioning bodies are holding comps in your area. Read up on their online requirements. Hit a few competitive events the night before it’s open to the public. Basically most comps are part of a festival on Saturday but the company cooks are there Friday morning-Saturday night. Speak with teams find a team that you speak with that would be willing to have you shadow or let you hang around and help clean up etc.

There's a roadside bbq place that uses liquid smoke in oven meat. What's your take on that?
Liquid smoke is not an item I use in my bbq. It’s generally make from smoke and water but I personally don’t think it belongs in good bbq.
