Louisiana Seafood Boil
A Fun, eat-with-your-fingers, summer meal.
This is not exactly as shown in the video because the timing was not quite right.
-To 24 cups of boiling water add a small can of Old Bay seasoning, Cajun Spice to taste for heat, a quartered lemon, and one bunch each of oregano and thyme.
-Add mini potatoes and shallots or small onions, Boil 15-20 minutes.
-Add corn on the cob cut into thirds and flat beans, Return to the boil.
-Add seafood, largest bits first. We used small lobster tails, crab legs, and very large shrimp. Do not boil. Turn off the heat and rest for 10 minutes.
-Drain and pour out on a newspaper covered table.
-Drizzle with melted butter.
-Serve with more melted butter or garlic/herb butter for dipping, crusty bread, and a crisp white wine.
