It doesnt look fully cooked on the inside. Eggs still a little runny and mushy. I'll just go with old style scrambled eggs with tortillas on the side.

Thank you so so much for recipe #1! Shout out from Canada! It's almost lunchtime now and I was looking for something that I could make right now with the limited ingredients that I currently have. The only ting I'm missing is the grated mozzerella cheese, but that's fine; I think I'll get by substituting that with a few slices of thick cheddar slices! 🤤✌

Why not scramble them in a bowl first and pour it onto the tortilla?

Would've gave you a thumbs up but tomatoes fucking suck. I clicked this for eggs. Not tomatoes. It's a trash food.

The only 'downside' I see is that the tomatoes will make the dish quite moist and soggy, especially if you use regular onions, and slightly undercook the eggs. I wonder if sun-dried tomatoes might work better? Or maybe adding the tomatoes at the very end, right before eating? Or maybe baking/broiling the entire thing with the tomatoes on top?

Wanna take it to the next level? Separate two egg yolks from their whites, then whip the whites until stiff peaks form. Then gently fold the yolks back into the whites, and add whatever else you’re in the mood for. Instead of a range top, bake it @ 360f until set… how long depends on what you add to it, usually about 10min… 😋
