Dude how do you heat it back up though? I’m all for resting meat. (No point in cooking otherwise) but throwing it in a cooler seems criminal to me. Could you rest it then throw it back on the smoker to heat up for a bit?

Do you wrap the brisket before resting?
Not usually! If it’s in foil, I leave it and rest and I might Saran Wrap if I’m putting other briskets on top, but I always let it rest down to like 170 before starting the hold
