Ingredients:
1 cucumber, diced
1/2 cup pomegranate seeds
1/2 red bell pepper, diced
1/2 cup sweet corn, boiled.
1 carrot, grated or finely grated
A handful of fresh mint leaves
Beetroot
1 cup plain yogurt
Salt and pepper, to taste
Instructions:
In a large mixing bowl, add the diced cucumber, pomegranate seeds, red bell pepper, corn, grated carrot.
For dresseing add the mint leaves and beetroot, yogurt, salt and pepper. Blend it smoothly.
Pour the dressing over the salad ingredients and gently toss until everything is evenly coated.
Taste and adjust salt and pepper if needed.
Garnish with extra pomegranate seeds if desired.
