Vegan Italian Pasta Salad | Vegan Comfort Meal
This recipe makes 1 serving
Ingredients
Italian dressing
1 ½ tbsp red wine vinegar
1 ½ tbsp extra virgin olive oil
½ tsp Dijon mustard
1 tbsp vegan parmesan/ground cashew
½ tsp nutritional yeast
¼ tsp dried oregano
¼ crushed red pepper flakes
1 tbsp Italian flat leaf parsley
1 clove garlic
Salt and pepper to taste
Instructions
1. Place all the ingredients into a small jar. Cover the lid and shake for 15 seconds until its combined well.
Salad ingredients
2-3 tbsp red bell pepper
2 tbsp olives
2-3 tbsp tomatoes
½ beyond hot Italian sausage
1 serving of rigatoni pasta
Instructions
1. Heat a non stick pan to medium low heat, add sliced sausage and pan fry on both sides for 2-3 minutes per side. Remove from pan once its cook and allow to cook while cooking the pasta.
2. Boil salted water and cook pasta according to package instructions, until its al dente. Strain pasta and allow the pasta to cool for 15 minutes.
3. While pasta is cooling, diced up the red bell pepper, olives and tomatoes.
4. In a large mixing bowl, add dressing, diced ingredients and pasta. Toss to combine well.
5. Serve with more vegan parmesan sprinkled on top!

Can you talk about what to look for when buying dark soy sauce? Where I am there are a lot of "fake" dark soy sauces with what seem like inappropriate ingredients. A video where you talk about all of your condiments and what to look for would be great.
Hahah I’m not sure how to answer that 😂 since I haven’t encountered that situation. I use whatever dark soy sauce I have at home. The one I’m using is a Malaysian Chinese brand Dark Soy Sauce. Mine just contains water, soybeans, salt, wheat flour. I know there’s a Thai one but not sure if there’s a difference in flavor and texture. Hope it helps!

Oh no I can't believe you just dissed the celery😱 that stuff is great dipped in literally ANYTHING. celery might as well be a spoon🥄😅 but my favorite two things to dip it in are hot sauce and peanut butter🤘
Haha celery is too strong of a flavor for me 😂 but a spoonful of peanut butter sounds nice!

Amazing looking food, although not all that healthy, as there appeared to be a lot of oil in everything. In the US, Trader Joe's sells a mochi pancake mix (made from purple sweet potatoes and other ingredients). The package is "accidentally" vegan and you can replace the egg in the package directions with a "flax egg" (ground flax seed and water) to make a really good chewy and flavorful pancake. (I also skip adding the oil that the package suggests to add.)
Yes, food in Hk is quite greasy but I was happy trying new foods! Yes I’ve seen some people on TH-cam try that pancake mix! Would love to try it! 😊

@@MikeDPlxztc no I wasn’t sick. there’s a mandatory 7 day hotel quarantine when you travel to Hong Kong.
@@charlotteyapvegancooking2251 oh good I'm glad you're okay that's crazy though why such a lengthy quarantine they should be able to just test you although it is well-known that tests are very inaccurate but that's a crazy long time to stay in locked on I don't think I could do that hahaha
Nice video. I am wondering if there is any (added) sugar in that oatmilk that you got. Those bananas you picked up look more like plantains, but then produce in the West tends to look very different as compared to the East. I wonder- food-wise, are you an 'organic' vegan or a 'conventional' vegan, or a 'situational' vegan (organic or conventional depending on both price and availability as well as quality) when you do your shopping? Great job! Please keep 'em coming!
Thank you! I don’t think that Oatly has any added sugar. I try to buy organic when I can and also depending on the price. Some organic products can be quite expensive. Also there isn’t organic options for a lot of vegetables and fruits so that’s when I just buy conventional ones.

You know, I gotta admit- I really had my doubts with the whole idea of vegan ramen, seeing as I have such fond memories of ramen and ramen shops in the Japan of my, ahem, long lost youth. But you did justice to the ramen, Charlotte. By the end of the video, I had an urge to push you aside, take up residence at your table and get down to some serious bidness! Great video- and kudos for coming up with a meat substitute using the reconstituted mushrooms and textured soy. Plus, I like how you recycled the water (very eco-conscious) and used pretty much all of the ingredients (you might want to make use of the mushroom stems next time, too... just sayin'). Please keep the videos coming! Great job all around!

Some nice tunes in the background. A possible semi-pro tip: add some chocolate chips (semi-sweet) and some spices (cinnamon, mint or you are truly adventurous a dash of the pepper of your choice) and you have a cool, exotic treat... Great job, Charlotte! Please keep 'em coming!

This was great! Thanks! And much respect to you for showing how to make the paste. This might be a pro tip for the novice armchair chefs out there: when making the paste, chop up the garlic, then add it- as that just may make the mashing part easier and faster (and save you from those dreaded hand cramps!).
