This recipe is the perfect vegetarian holiday main dish!
Lentils, sweet potatoes, and veggies are wrapped up in puff pastry in this surprisingly easy vegetarian main. Inspired (very loosely...) by beef wellington, this is a great option for plant-based dinner parties or Thanksgiving dinner.

INGREDIENTS
▢1 sheet frozen puff pastry
▢1 large sweet potato
▢2 tablespoons olive oil
▢8 ounces white mushrooms
▢1 large carrot
▢1 medium shallot
▢1 medium zucchini
▢½ teaspoon kosher salt
▢3 cloves garlic minced
▢½ cup raw walnuts roughly chopped
▢1 teaspoon dry rosemary
▢1 teaspoon dry thyme
▢3 tablespoons tomato paste
▢15 ounce can brown lentils (roughly 1.5 cups)
▢1 tablespoon balsamic vinegar
▢1 tablespoon soy sauce or tamari
▢½ teaspoon ground ginger
▢¼ cup vegetable broth or water
▢1 large egg
▢1 tablespoon cream or milk or half & half

For the caesar, is it 1.5 cups cashews or .5? You say “one half cup” so I’m a little confused. I made it with 1.5 and had to add lots of water

while not a vegetarian--i always like vegetarian options, as I'm not a big meat fan at many places I worked, they thought I was a vegetarian because I usually only eat 1 serving of meat a day--and often none at all
Love that! Vegetarian options can definitely be enjoyed by everyone regardless of if they eat meat or not. In fact I love when non-vegetarians make my recipes!

They make Red Lentil Flour also as an option instead of Garbanzo Bean Flour or Mung Bean Flour but Lupini Bean is a neutral flavor like Mung Bean Flour too and is a superfood with many nutritional and health benefits that can be bought whole dried, cooked, flour or flakes too. Another idea is that they sell dried Chicken of the Woods Mushroom which is said to have a fried chicken like taste and texture but know that if harvesting them yourself, some trees are poisonous to humans if ingested and food suppliers know that but a piece could be blended in the water like chicken stock before hydrating the TVP possibly. The TVP is the way I plan my recipe but with ideas that I am sharing above. Also, seeing your professionalism and education in vegan food gets understood but it's hard to understand why you don't have a lot of subscribers.
Am I missing something? My lentils are still rock hard after 50 minutes of cooking
That doesn't sound right, are you sure the liquid was simmering enough? Are they orange or red lentils? It's possible they were already old when you bought them which makes them cook more slowly, but still my red lentils usually take no more than 25 minutes max. I would bump up the heat if they take that long.

@@CozyPeachKitchen yes was hot enough, I even tried turning it up and nothing changed. They didn’t cook at all just stayed rock hard (red lentils. All I can think of is there was something wrong with them when I bought them 🤷♀️ or I did also add salt at the start of cooking instead of the end, I did read salt can stop them cooking but it was just a pinch of salt and they didn’t cook at all. I’d say something was wrong with them

Quick tip. If you have an airfryer big enough to hold a pound cake tin, you dump all the ingredients in it and back it in your airfryer.
A quick tip, just add the rice in a separate bowl inside the pressure crocket atop the ring thing it comes with. I do it all the time with Daal Chawal (lentil & rice) it comes out perfectly.

Looks so good. I don't think I have seen anyone tear their tofu instead of cutting in squares or triangles. This tearing method looks like it would help dry seasonings stick better to the tofu. I like this idea. The only downfall I see in this is that it looks pretty messy. Crumbs on the counter, crumbs in the air fryer. I use my air fryer all the time and line a pan with foil that I throw away after one use making cleanup so simple and no dishes to clean. The downfall to that method is the food isn't as crunchy coming out of the air fryer but it saves me so much time in cleanup. How much time do you spend on cleanup? I am like you, I start out cooking dinner and end up with the same tray of food each time. Probably we do this because we just really like what we are making. I have all these different spices and I end up pretty much using the same tried and true spices over and over!
You are so right on both counts! The seasonings get in the nooks and crannies. I almost mentioned in the video that if you don't like mess keep to the sliced tofu. My air fryer has a pan below the air fryer basket that catches crumbs. I line this with foil, so thankfully no crumbs in the actual air fryer (you might notice some when I open the door at one point at the end, that's because I wasn't thinking and started shaking the basket...thus shaking more crumbs to the bottom.) I love my fancy toaster oven/air fryer but do find it a little harder to clean than a classic basket air fryer. Happy cooking! :)
