My goal with this channel is to make cooking approachable, to show how easy it can be to make amazing meals at home even when your kids and animals are buzzing around the house. Making delicious recipes in a real environment to keep meal time in your home fun and exciting. We try new things, elevate old recipes and keep it fun.
I'm just regular guy, a husband and a father, with a passion for cooking, and it's the encouragement of my family that resulted in this channel. I'm a self taught cook who simply likes to cook the things I like to eat, but at as high a level as I know how. Cooking for me is a way to relax, flex my creativity and learn as I go. Cheesy Vegetarian Potato Tacos - Homemade Avocado Salsa - My New Favorite Taco Recipe - EP 52
I've found my new favorite taco! No, seriously these cheesy, crispy, spicy, creamy mashed potato tacos are a game changer. I've had these off a taco truck a few times and finally recreated them at home, and they were well worth the time and effort. You have to try these at home, they take a little time but are worth every second.
Potatoes
3 large, peeled russet potatoes, cubed and boiled in salted water until fork tender. Mash until smooth.
Add 2 tsp salt, 2 tsp pepper, 1/2 tsp cumin, 1/2 tsp smoked paprika and 3/4 cup shredded Oaxaca cheese. Combine completely. (you could also use microwave potatoes with the added items to save time)
Avocado salsa
6 tomatillos, 4 serrano peppers (use fewer or jalapenos if sensitive to heat), 1/2 sweet onion, broil under high heat until nicely caramelized. Blend with a handful of cilantro, the flesh of two avocados and the juice of 1 lime. Salt and pepper to taste.
Warm corn tortillas in a microwave under a damp paper towel to soften, fill with potato mixture and fry at 350 - 375 until golden brown. Top with avocado salsa, crema, onions, cilantro and queso fresco.

This production quality is insane for the view count. My only criticism is with using bagged cheese. That's why the cheese pull was lacking. But keep it up.
I always use bagged cheese. Honestly it tastes great and melts fine. And it's convenient.

If you know me, I’d never dismiss cheese, but it was just over powered and you couldn’t taste it. Raw onions may have added a nice bite, I don’t know though.
Homemade chilisauce, what is it made of?
It’s not homemade as in I made it, you buy it at the store and it’s called Homemade Chili Sauce.” It’s basically ketchup with onions and peppers, it’s super good just on crackers. I use it in place of ketchup for a little extra something.
