Ingredients:
Boneless chicken: 300g
Salt: to taste
Minced ginger-garlic: 1½ tbsp (1 tsp for marinade + 1 tbsp for cooking)
Black pepper: ½ tsp (adjust to taste)
Chili flakes: ¼ tsp
Cornstarch: 3 tbsp (for marinade) + 1 tbsp (for gravy)
Water: 5 tbsp (to mix cornstarch)
Rice flour: 1 tbsp
Egg: 1
Oil: For deep frying and 2 tbsp for cooking
Light soy sauce: 3 tbsp
Dark soy sauce: 1 tbsp
Onion: ¾ cup (cut into your preferred size)
Bell pepper: ¾ cup (any color, cut as you like)
Jalapeño: 1 (or substitute with any chili pepper)
Instructions:
Prepare Chicken:
Wash the boneless chicken and cut it into small pieces. Place them in a bowl.
Add salt, 1 tsp minced ginger-garlic, black pepper, cornstarch, rice flour, and the egg. Mix well to coat the chicken evenly.
Deep Fry Chicken:
Heat oil in a pan over medium heat.
Once hot, add the chicken pieces and fry until golden brown on both sides.
If the chicken sticks due to the coating, separate the pieces gently with a fork. Set fried chicken aside.
Prepare the Vegetables:
Heat 2 tbsp oil in a pan over medium heat. Add the onions and sauté for 1 minute.
Add the remaining minced ginger-garlic and stir for 30 seconds.
Toss in the bell pepper and jalapeño, cooking for another 1-2 minutes.
Season and Add Sauce:
Season the vegetables with salt, black pepper, and chili flakes. Mix well.
In a small cup, mix 1 tsp cornstarch with 5 tbsp water.
Lower the heat, add light soy sauce, and stir in the cornstarch mixture. Cook for 30 seconds.
Add dark soy sauce and cook for another 30 seconds.
Combine Chicken:
Add the fried chicken to the pan and mix everything for 1 minute. Turn off the heat.
Serve:
Serve this delicious chicken dish with rice.
Tips:
For extra flavor, marinate the chicken for 15-20 minutes before frying.
Adjust the chili flakes and jalapeño for your preferred spice level.
Use freshly minced garlic and ginger for the best aroma.
