Making Salt for NYC’s Fine-Dining Restaurants | by Eater Video and Katie Pickens
Salt is the foundation of cooking. It is a building block of texture and color, and most importantly, it provides the consistency of flavor that most diners look for in a restaurant meal. Even more magic happens when you use it to finish a dish, allowing the guest to crunch down on the crystals, creating a flavor experience that’s been enhanced even after the cooking is done.
In this episode of 𝙃𝙤𝙬 𝙩𝙤 𝙈𝙖𝙠𝙚 𝙄𝙩 host Katie Pickens gathers ocean water by hand along with Amagansett Sea Salt owner Steven Judelson, who shows her how to turn it into some of the most delicious finishing salt ever had. It was an immensely gratifying day spent outdoors, starting at the beach in the early morning and ending on an outdoor salt farm.

    Could you provide any information about the 50 micron sieve, they look mighty convenient; however i'm having a bear of a time finding them.

      We've changed our filtering processes over the years and now use different types of filters ranging from 200 microns to 0.5 microns. Much of our filtering equipment is now custom-made to our specifications. We haven't used or sourced the sieves shown in the video for some time. When we used the process and equipment seen in the video, we sourced much of our filtering equipment from suppliers in the biodiesel field. I suggest you investigate them

    Plastic water buckets from the ocean, plastic barrels for transit and plastic drying bins covered with plastic bubble wrap? Maybe you are just trying to make the microplastics in the seawater feel they are in a safe space?

    How can one learn how to start a sea salt business if we live by the sea?? I love in east coast north Carolina

      Thanks for watching Liza’s wonderful video! There’s no instruction book for how to start making sea salt on a commercial level. Our formula was to start with a good, clean source of seawater (thoroughly laboratory test the water to make sure it is safe!), followed by time and patience, lots of hard work, and the stomach to learn from the mistakes (there will be lots along the way). We quickly discovered this is a full-time job and not a side hustle.

      Thank you for watching the video and contacting us! We measure our production in pounds and gallons. 100 gallons of seawater usually results in 12 - 14 pounds of sea salt.

    How do you keep bugs and dust from getting into the salt as it air dries? Or how do you clean the salt before packaging?

      Pollen, dust, insects, milkweed seeds, and a host of other airborne materials must be dealt with and the salt needs to be thoroughly inspected and cleaned before being packaged and sold. During our 30+ years of salt-making, we have developed a variety of methods and materials to address these issues. While challenging, time-consuming, and sometimes expensive, the benefits of open-air salt making greatly outweigh these costs.

    Hello from a tiny island off west africa, im looking at starting a small project for a fishing village of 30 families that totally rely on salting their fish for preservation, we are looking at constructing one evaporation box, arnd 3x4 mtr lined with black plastic and taking sea water from the sea to evporate just like you. Our plan is to filter the sand sediment out but is it necassary to let the water sit on a seperate container like you do for some time before decantering or can we filter is straight into our 3x4 mtr area and let it evoprate directly? We appreciate any help!

      Thanks for your comment. First, our techniques have changed from those shown in the video, but the process shown certainly works. Next, be careful about black plastic! Some plastics are colored black with non-food safe materials. As to your specific question, we allow the seawater to sit so extremely fine materials that are suspended in the water settles and can be removed. This helps to make better salt.

      Thank you for your note. We stopped using these bins several years ago. The bins in this video are made from high-density polyethylene. Yes, we were concerned about materials leaching from the bins and spent considerable time searching for manufacturers who used safe and certified materials and were able to provide us the appropriate third-party certifications. Afterward, we performed much testing. Many bins of this type are available, but the materials and quality vary greatly. We now use custom-built salt pans made from a polypropylene-like material.

    Hello from Australia, I am wanting to do a small harvest with my kids, do you have to filter the water? Or is there an easy method I could use with my kids (aged 5 and 11) or do I just let the water settle and than syphon out the top 90% of the water in hope the sand and what has settled to the bottom?

      We use a variety of filters AND settle the seawater.
