Hidden fields can be used to pass information that the user doesn’t need to see or interact with directly, such as user IDs, current date/time, or other sensitive data. This helps maintain security by keeping this information hidden from the user and prevents it from being tampered with.

We do have that setting, it's called "Validate as unique" in the settings. However, this feature is only available in the premium version.

It's not within the 'Settings' on the Everest sidebar menu, which confused me too! You need to click on one of the specific contact forms you've created (accessed by 'All Form' in the Everest menu sidebar . Then click the settings for that form (accessed by clicking on the form or by hovering over it and then selecting 'Edit'). You can then adjust the "Admin Notification" field within the Settings menu, as shown in the video. Best of luck!
