Homemade Hot cross Buns
Please read the full recipe and important tips for baking the hot cross buns on the blog:

Ingredients:
*For Dough: 500g white bread flour | ⅓ cup 80g Granulated sugar | ½ tsp ground ginger/nutmeg |¼ tsp ground cardamom |1 tsp ground cinnamon |1 tsp salt |7g dry yeast| 85g butter, cubed at room temp. |2 medium eggs |120ml milk |⅓ cup 80ml water |1 cup - 200g raisins | 1 cup orange juice and splash of rum |*For the glaze |½ cup maple syrup |*For the crosses |½ cup all-purpose plain flour |2-3 tbsp water
Instructions:
*To Soak Raisins: Please watch the video on my TH-cam Channel. First juice the oranges. Soak raisins with the juice, and a splash of rum! Put aside and drain just before using. | *To prepare dough: In a large bowl, sift the flour, then add sugar, spices, salt, and dried yeast. | Add the small cubes of butter to the bowl and use your fingertips to rub it into the dry ingredients, until the mixture has a texture of breadcrumbs. | In a small saucepan add milk and water and warm on the stove. Set aside. | Add warm liquid and eggs then mix until you have a very sticky dough then add the drained soaked raisins and mix until combined, about one minute. |Transfer the dough onto a floured surface and knead it for 5-10 minutes until it becomes slightly smooth. | Place the dough into a lightly oiled bowl, cover with kitchen towel and let to prove in fridge overnight, or if in a hurry, leave in warm place for 60 minutes. After 60 minutes, transfer the dough on a surface sprinkled with flour and fold it a few times. |Divide the dough into 12 equal portions and shape each one into a ball. (If the dough is cold from fridge, leave at room temp before cutting and rolling) | Place the buns onto a baking tray covered with paper, leaving a small gap between each bun, but not too small, traditionally it’s best if they join together during baking. |Cover the buns with a clean kitchen towel and rest for a further 30-60 minutes or until the buns have doubled in size. | *To make the crosses: mix the plain flour with enough water to create a smooth paste. Spoon the mixture into a piping bag and pipe a cross onto each bun. | *To bake Buns: Preheat your oven to 180°C. |Bake the buns for 15-20 until they are golden brown. |Remove the buns from the oven and brush them with maple syrup while they are still hot.

I just made this dish today and my whole family absolutely loved it!
