Sunday Prep - Dominique Ludwig Nutrition
Sunday prep day is a great way of getting ahead of yourself and making midweek cooking and packed lunches a cinch.
I’ve chosen to roast beetroot, carrots, and red onions today. These become beautifully sweet when roasted in olive oil and thyme in the oven and can be used in a variety of ways to liven up some midweek meals.
I love to use these in a salad with feta cheese and walnuts and run, lentils, feta cheese and walnuts through the vegetables with a gorgeous dressing. That provides sustainable and delicious lunch with very little prepping.
I also like to eat these warm by reheating them alongside chicken, fish or even grilled halloumi.
You can even add vegetable stock and whizz them up into a thick soup. don’t forget to add some protein to your soup, I love to sprinkle over plenty of feta cheese which blends itself incredibly well with the taste of the beetroot.
Brightly coloured vegetables contain many plant chemicals called phytonutrients. These compounds from the plant kingdom, interact with our own body and can have certain properties being antioxidant or anti-inflammatory in the body.
In this case, we are boosting our beta carotene and anthocyanins via the purple and orange colours in the vegetables.
Cook for around 40 minutes and then store in dishes in your fridge for easy meal preparation during the week.

This message is just so important. Eating LESS or choosing low calorie options is mostly counter-productive. Obviously, I’m not talking about eating a Mac and Fries here, but about eating sufficient, nutrient rich foods, in the right amounts. A lower energy meal might be a low-calorie sandwich or salad pot boasting 350 cal for example. But it could be a salad with tuna made at home so a healthi...

I’m sorry to say it, but it’s true. Granola is a topping and not the star of the show. 🎯 Deliciously, crunchy and crispy, granola can add plenty of incredible nutrients to our breakfast. The problem is that when we eat shop bought granola, we are eating a high carb food that may not fill us up until lunchtime and may only deliver short-term energy. Also the portion size to fill it up is normall...

This is my take on the viral chocolate and silken tofu mousse made with just a handful of ingredients! OK for me, I wanted it to be just a little bit more chocolatey, but it was delicious and I was really happy with the results. So I have added a bit more chocolate! But rest assured, dark chocolate contains protein, fibre, antioxidants, polyphenol and extra magnesium. Super Duper Easy 1 x 300g ...

This is a great example of an EAT one - KEEP one dish. I get asked all the time, about what you can take for a healthy packed lunch and this ticks all the boxes. It contains proteins, healthy fats and fibre as well as hormone friendly phytonutrients. Trout is a great source of the active omega 3 oils EPA and DHA. This time I cooked some trout, but it could’ve been chicken, tofu or whatever I ha...

Lots of people ask me about my protein shakes, if I have them, which ones I buy and what I put in them. I use them as a top up, when I’m short of time or if I feel that my diet has been a little bit lower in protein that day then I would like. I was using @rawsportofficial collagen plus, vegan protein powder this morning in banana flavour. As I mentioned please check the ingredients are right f...

Just another way to make your eggs fill you up. I love this for breakfast or lunch and it’s so simple that you can make it while your eggs are cooking. Simply poach or boil a couple of eggs, I do this in a shallow frying pan if I poach as they tend to hold together better. Next take 150 g of high protein yoghurt (10 g of protein per 109g grams) and stir in one crushed garlic clove, some lemon j...

It contains the 3 P’s-PROBIOTICS, PREBIOTICS and POLYPHENOLS. This recipe has around 15g of fibre which is HALF of your recommended daily intake and 28g protein! And it’s so quick and easy to make! Make sure to keep this breakfast with a l...

This is so true. Having a health kick for a few weeks is not the same as having a healthy lifestyle. Even when I’m on holiday, I follow most of my advice most of the time. I still find a corner where I can practice Yoga with a view of the sea, walk and exercise each day, and still eat plenty of salad ( and even drink some rosé). It’s the consistency that counts. Here is something to really think about. Is calorie counting just a waste of time or is it a useful means of weight management? Obviously calories are not a completely useless measurement, they give us a rough idea of how much food we require each day and going into a surplus will eventually lead to weight gain. However, many of the foods that we eat today are highly concentrated forms of energ...

Chickpea rolls- yes honestly these are rolls made out of soaked chickpeas. Most gluten or wheat free breads are loaded with additives, act quickly on our blood sugars and are low in nutrients. In fact, I would go as far as to say, most gluten-free bread is ultra processed. I have mastered making bread rolls out of red lentils and flaxseeds and now I have moved on to chickpeas. So what's wrong with avocado smash itself? Avocado has way more benefits than peas. Protein is important but so is fat. Especially coming from avocados. Unless you want a totally different dish but then why do you feel the need to call it novocado?

Polyphenols are extremely toxic. Nutritionists have gotten everything extremely wrong. I have a history of autoimmune disease and the only thing that helped is eliminating the so called "benefial" things recommended by most nutritionists like fiber, polyphenols etc. If you want to heal your gut eat meat and eliminate high fiber foods. I like potatoes, very ripe fruits as far as plants and meat, dairy and eggs.

Whats so funny if that you are even saying this in your bio. Polyphenols are the plants defense mechanisms. Why would their defense mechanisms be good for us. They dont want us to eat that. Thats what gives them that taste. Bitter is the worst taste from all the tastes and our body shows us that its not healthy for us but somehow because scientists say it its healthy. Taste is literally an indicator for if something is good or not.
