Thanks! The meat thermometer makes all the difference. Internal temp and resting time really helps get it right.

In my country, we usually roast them directly on the stove fame. Then we do the same with the plastic bag. You will get a more homogeneous roast.
Yes I like to roast them in direct flame as well, but did not have a gas range in this case. Skillet works fine, cast iron works better. Can even do it by hand with a flambé torch or even a pipe sweating torch from the garage.
It’s the flip that gets me. Break the yolks about half the time 😢
It's almost ALWAYS the flip. Or the initial drop into the pan. That's why I want the egg super close to the pan so it doesn't have a long fall, and the flip is nice n gentle, not a violent FLOP over. I still break a yolk here n there, too.

I've never thought of doing this, but it seems like a really good idea.
.....I PROMISE you, it is. No seasonings required, because the chorizo covers that part. Super easy, and delicious.

Watched a few of your videos and enjoyed your simplistic approach. You are absolutely correct in that not everybody knows how to do everything or something as simple as making garlic bread. I'm going to stick around awhile... and see if I can use one of your videos to spice something up like a homemade sriracha mayo to pare with a chunk of fish or something. BTW a bottle of sriracha/mayo would go bad before I used it up, but I can make a meals worth at a time and waste nothing. Bravo.

They look great, what are the cooking temperatures for the 2 hour and 1 hour cook please roughly.
I had the oven around 225 for all 3 stages. I kicked it up to 250 for a bit during the 1st stage as they looked like they were cooking a little slowly at first. I usually do this on a grill, so it was my first time trying it in the oven.

Not tried one of these before so will make one the day after Christmas as will have ham and turkey. We don't sugar on savoury sandwiches in UK do you think if I warmed some honey and brushed it over the sandwich that could work ?
I have not tried this before, but honey is still sugar. Here in the US, a monte cristo is usually dusted with powdered sugar, but it does not have to be.

Great video, looks like an interesting sharpener. Seems like a fantastic alternative to a drag through knife sharpener. As a professional chef and knife sharpener I'd like to give two pointers. Place a damp towel underneath the sharpener, and bring your sharpener to the end of the table. That will prevent slipping of the sharpener and taping your edge on a hard surface.
Haha thanks! Yeah, I do not like the drag the wheel ones at all. You are correct on both counts with the towel and the edge. I was trying to keep it in frame a bit better. I like putting a wet towel under a plastic cutting board so it sticks in place, also.

I got my Lansky 4 rod turn box for about $30 dollars. Same as this, super easy to use.
Ha, something that exists thanks to the Dutch :-) In the Netherlands - which flourished during the Golden Age - there was an abundance of butter. And traders that we are, we also exported plenty of butter to neighboring countries. This butter-based sauce was made with Dutch butter, hence the name sauce hollandaise!
While I know how to make and love the sauce, I did not know the backstory behind it! Thanks for filling in the gap! Interesting.

Lacking good natural instincts for this sort of thing, I like the detailed temperature references that even a novice could pull this off. Cool smoker too. Can't wait to give it a try. Thanks for posting.
