I am at Oink Inc Smokehouse and Southern Kitchen in Jasper, IN, with my friend @RandySantel, and we are attempting their undefeated 7lb Totcho challenge. This challenge starts with a layer of four pounds of tater tots, and then it gets smothered with ladels of their homemade cheese sauce. It is then topped with four of their signature flavors. Brisket totchos - roasted poblanos, queso, chopped brisket, and cherry chipotle BBQ sauce. Buffalo Chicken Totchos - queso, blue cheese or ranch sauce, buffalo chicken, and a green onion garnish. Triple Pig Totchos - topped with smoked pork butt, chorizo, queso, smoked bacon, and green onions. Lastly, Smoked Reuben Totchos - topped with seasoned kraut, white cheddar, queso, smoked corned beef, and a garnish of house-made Thousand Island dressing. We will each get one hour to complete this and if we do, we will get the meal for free, get an awesome assortment of merch including BBQ sauces, coolers, and a T shirt, receive a $100 gift card, and go up on the Wall of Fame as the first and second winners!
