Recipes from Culinary School 〆 Episode 2 : Strassburger Cookies
Strassburger Cookie Recipe
The professional pastry chef by Bo Friberg, pg. 270
6 oz - Butter, unsalted & at room temperature
4 oz - Powdered Sugar
1 ea - Egg
2 ea - Egg Yolk
1/2 tsp - Vanilla extract
10 oz - Cake Flour
1/8 tsp - Ground Cardamom
As needed - Coating Chocolate, melted
1. Beat the butter & sugar together using the paddle attachment at medium speed until light and creamy.
2. Mix in egg & egg yolks, few at a time.
3. Add vanilla extract.
4. Add flour and cardamom and mix on low speed until well combined.
5. Place the cookie dough in a pastry bag with a start tip. (I used Ateco size 827 &
6. Pipe the dough into one of the following shapes: shells, rosettes, S shape.
7. Chill cookies in fridge and preheat the oven to 375 , 350 for convection
8. Bake until golden

Hi I'm sure you know this but if you don't want bubbles in the bottom of your pie crust you can put down parchment paper and then put uncooked beans in it love the video❤
This is actually graham cracker crust! So I just push down the bubbles right after it comes out of the oven with a cup. Thank you for keeping an eye out though & thank you for watching! 😊
