It looks like the fans are controlled by separate controls cause some are on high, medium and low

My local Costco on Windfields Farm East has 2 Kelley HVLS fans at the front of the cash registers and 2 Macro Aire HVLS fans in the auto shop.

How can a cord plug fan be reversible?
It seems like the plugs are added, normally they would be white and not looking like this, so they wired it to the cord plug to be in reverse
