Just wonderful... simple and straightforward !!! Question: I noticed that you handled the dough very carefully just before placing them in the baskets. What If I wanted to divide the dough, (assuming I have prepared enough dough) into 3-4 loaves. I am concerned of loosing the air that it has trapped thus far.
@@felixdiaz52 glad you enjoy the video! You can absolutely divide the dough. You can coax the dough out onto your floured surface, then use a bench scraper to divide it into your desired portions- some people will weigh the dough during dividing to get exact proportions (you can use the bench scraper to take off and add little pieces of dough as needed if you are weighing). Then simply shape as usual! As long as you handle it fairly gently, you don’t have to worry about loosing much of the trapped air. It will “puff” back up a bit during proofing as well.
