1/3 cup honey (or substitute with a keto-friendly sweetener for a stricter keto option)
1/3 cup tahini
1/2 cups almond flour
1/2 teaspoon aluminum free baking soda
1/8 teaspoon sea salt
1/2 cup sesame seeds
🌿Instructions:🌿
1. Preheat your oven to 320°F (160°C).
2. Roll the dough into a long tube on parchment paper.
3. Cut the dough into 1/2 inch pieces and gently pat them down to form cookie disks.
4. Place the cookie disks on a baking sheet lined with parchment paper.
5. Bake in a preheated 320°F oven for 12-15 minutes, keeping an eye on them halfway through as they brown quickly.
6. Once baked, transfer the cookies to a wire rack to cool.
7. After cooling, store the cookies in an airtight container for up to 7 days.

    You had a good idea here but it's poorly executed and not thought out. Why on earth would you put cottage cheese curds in with the egg and not blend the cottage cheese first? I certainly don't want pancakes with cottage cheese curds in them. If you had blended the curds this recipe would have been perfect.

      Thanks for your input! The cottage cheese in the recipe actually softens during cooking, so the end result isn’t grainy. However, if you prefer an even smoother texture, feel free to blend it beforehand. Hope this helps!

      Thank you for your question! I typically use organic allulose liquid sweetener because it provides a similar texture to regular sugar in baking. However, if it doesn’t agree with your gut, you can try experimenting with monk fruit sweetener instead. Feel free to ask if you’d like the brand recommendation! :)

      Thank you for sharing that information about allulose being banned in the UK. Also, apologies for the delayed response. I typically use monk fruit sweetener from Costco since it’s non-GMO, but there are also other high-quality options like Lakanto. When it comes to stevia, I usually recommend the liquid extract to my clients and use it myself, as it’s less processed. It works well in parfaits and smoothies but doesn’t hold up as well in baking. Xylitol can be a good choice for baking if your gut tolerates it, and it may help to reduce cavities based upon some studies. Just a quick note-avoid xylitol if you have dogs, as it’s toxic for them. Hope this helps! Let me know which sweetener brands you prefer for baking.

    I tried this and liked it but I modified it a little with more af and powdered sweetener. I did not put syrup in the batter knowing that it could cause it to stick. Also, a big problem with all these recipes is there's a difference in cottage cheese consistency. You need this to be sort of a dry consistency otherwise a runny batter will make them hard to turn without breaking apart. Mine were blackened but did not taste burned. They had a sort of gingerbread flavor which I liked.

    Great recipe. When I try recipes with flax without the egg, the crust always separates from the inside of the bread while baking. Why is this?

    I find the flax causes hot flashes for me. I can’t even use the oil on my skin. It’s so weird. Has anyone else had this issue?

    I went through the video a couple times and noticed you didn't put in the psyllium husk powder in the video I'm assuming you add that with the flax seed??. Do you add the apple cidar vinegar when you add the warm water? Thank you for doing this video. Just confirming 🙂

      I used tapioca starch instead of psyllium powder in this recipe and it is shown when I added all the dry ingredients. Apple cider vinegar is optional to add because I have used instant yeast that is why didn’t add in this recipe. However you can add apple cider vinegar for an extra lift when adding hot water.

    Do the unsaturated fats not oxidize during roasting? These fats should not be heated, I thought.

      The hard shell around flax seeds helps prevent fatty acids from oxidizing. However, when ground, the delicate fatty acids are exposed to light, heat, and air. Therefore, I don’t recommend buying flax meal. Instead, grind a small batch for up to a week and store it in the fridge to prevent fatty acid oxidation. If you have whole flax seeds, you can store them in your pantry. Nature protects these essential fats with a hard shell. I hope this information helps. Thank you for watching my videos! Because many people enjoy dark chocolate and have read about its health benefits, they need to be aware that some brands contain high amounts of cadmium and lead. It could be a concern for people who are indulging in large quantities! Consumer Reports released its evaluation of top brands in October of this year. While some results agreed with previous studies, not all did. If you google dark chocolate toxicity Consumer Reports it should pop up. If you have problems finding it, let me know.
