Ingredients:
1 onion (chopped)
1 carrot (chopped)
¼ cup cabbage (chopped)
1 tbsp oil
1 tsp cumin seeds
1 tomato (chopped)
1 tsp salt
1 boiled potato (grated)
1 cup homemade paneer (crumbled)
½ tsp red chili powder
1 tsp coriander powder
½ tsp chaat masala
¼ tsp garam masala
Fresh coriander leaves (chopped)
Whole wheat flour dough (for roti)
Desi ghee (for cooking)
Beetroot raita (for serving)
Process:
Start by chopping 1 onion in a chopper. Then, in the same chopper, add 1 carrot and some cabbage, chopping them finely.
Heat a pan and add 1 tablespoon of oil. Once hot, add 1 teaspoon of cumin seeds, the chopped onions, and grated onions. Sauté until they turn pink. Then, add the remaining chopped vegetables. Sprinkle 1 teaspoon of salt, mix well, and cook until the moisture evaporates.
Next, grate 1 boiled potato into the pan and add 1 cup of homemade paneer. Mix in the spices-½ teaspoon red chili powder, 1 teaspoon coriander powder, ½ teaspoon chaat masala, ¼ teaspoon garam masala, and some fresh coriander leaves. Stir well until everything is well combined. Turn off the heat and let the mixture cool completely.
Now, roll out whole wheat dough into rotis and cut them into circles using a cookie cutter. Take the cooled stuffing and shape it into a small triangle. Place it in the center of the roti cutouts, fold from the bottom, and seal from the sides, making sure to secure all edges properly.
Heat a tawa and lightly grease it with desi ghee. Cook the stuffed parathas on both sides until golden brown, flipping occasionally to ensure even cooking. Also, cook the edges properly by holding them up with tongs.
Once done, pack the parathas in a tiffin along with beetroot raita. These delicious and nutritious parathas will make sure your kids never return home with an unfinished tiffin!

How i make more garlic less ginger, grate ginger and garlic with grater(its hard), no onion, shallow fry then add water, after 2 mnts add lassi type dahi, not milk, on low medium heat cook for 15mnts add Shania leaves, yum yum, eat with dry roti
