Taro Root (Elephant Ears) first harvest

I trimmed some young trees and tossed the branches in for Ms. Kimber to play and snack on sugar hackberry leaves. Lady Jasmine stole a few, too.
Funky container garden tour

Just a look at my funky container garden. No rhyme or reason to plant selection, just trying to learn what likes to grow in my climate. I use “olla pots” in several big pots to help keep water to the plants. It gets really hot here…upper 90’s to low 100’s for the summer months.

I am curious if anyone has bothered experimenting with how to optimally process these to make bread or even sweet cookie biscuits, like tea biscuits. It has potential to become more of market valuable for individual consumer as well as restaurants and bakeries or whatever, not just anti starvation home permaculture crop. and they look like pretty sunflowers. Maybe extract the starch for better storage, dry and powder for flour? I don't know, am curious. looking forward to trying it shaved and fresh on a salad or in a stir fry! And hash browns looks like a good idea too! Also, the ease of growing would make it great to feed pigs goats or whoever else 🌎 ❤ from a fellow Texan, from the Hill Country
I have fed the tops to the rabbits thru the summer.
I had not thought about trying to make flour. Interesting. I have read of some folks fermenting or pickling them also.

I have stored them in damp sawdust in a 5 gallon bucket outside in the cool shade (or I just leave them in the ground 'til I want some). It doesn't freeze much here. They last longer like that than they do in the refrigerator. I fart too much on the cooked ones. I love them thin mandoline sliced on my salad.

How long did the pints take ?and how much of the tank did it use up
The pints took 35 min at 10 lbs of pressure (just like carrots). It is chilly outside so it took a while to initially heat up. It took about 1-1/2 hours total to heat up and cook. I have done three loads of jars (veggies) on this same propane tank and it feels like it is still about half full. I do not have a scale to accurately measure the remaining fuel. There is a tare weight (tw) printed on the collar of every propane tank. If you weigh the propane bottle and subtract the tw then you will know exactly how much fuel remains. Cooking times vary based on many factors, including jar size, food type, ambient temperature, wind, etc. I prefer to “cold pack” for canning which requires much more time to heat the canner to temp. Larger jars require more time, Meats require more time, etc. I also refill my propane bottles rather than exchange them which will give me more cooking time. A standard bbq propane bottle can hold 20lbs of propane. The exchange cages that you typically see at the grocer or gas station are only partially filled (15lbs in my area). The fill weight will be printed on the info card at the sale cage and on the plastic sleeve of the bottle. There are several places to refill your bottle, Uhaul, Ace Hardware, Tractor Supply just to name a few. I find refilling to be much more economical since the place I go will fill the full 20lbs for a few dollars less than the exchange bottle. That said…the inspection date on your bottle will expire. At that time the best option is to exchange the expired bottle for a newer bottle at one of those cages. Look for the newest date you can find and be picky if they will let you 😁 Now you have a bottle that can be refilled when you have depleted the propane it is purchased with.
Also, be sure to remove the plastic sleeve from the bottle as this likes to hold moisture which can cause rust.

It’s not a fancy set up, but it works :-) You can easily use a stove top for canning also, but we do not have a stove here at the cabin :-) GOD Bless
No one in my area has them for sale. I want 🌞 chokes so badly. Those on Amazon have bad reviews. Pls help !
You just need to grow you own. They are easy. I pulled a bunch out one year and put a free bucket out front with roots in wet sawdust. Didn't get too many takers. Just ate some mandolined into my salad right now. I fart too much on the cooked ones.
