And once about 10 years ago I was visiting a family in the small town of La Laja, which is maybe 40 minutes east of San Sabastian. We didn't speak much Spanish at the time and one day the patriarch of the family points to his truck and we pile in. He took us way up a mountain gravel road to his friends still. It looked like a glorified very large pressure cooker, with a serpentine copper tube passing through a water vessel. At the end of the tube was a 2 liter plastic Pepsi bottle catching the drips. The man filled my glass. The taste was just wonderful and the word I stuck on was Joven... very young and sweet. I laughed a lot that day. I asked him "Where is your fermentation?" and he simply said turn around Amigo where I saw a row of simple plastic garbage cans jammed full of mashed upstairs agave. Later his wife came out and we walked up a trail the this huge agave plant that looked like you maximillus? She showed me where the chopped a cavern into the core of this mature plant and she ladled out this wonderful juice from this cavern.
