I don't think I saw him add salt in this recipe which was interesting. But the thing that really got me thinking was how he prepared everything. He wasn't using the oven to cook anything down. He was using the oven to cook the sauce to intensify flavors. I love that.

Dear God, it’s a good recipe and good technique but my gosh the dramatic pauses and theatrics are so silly. It is not that profound.
nice sauce. probably. but definitely not ragu Bolognese. not by any recipie garlic. no fry vegetable soffritto in butter never add thyme or bayleaf mince should be beef and pork so it is greasy enough not to need oil.. wine is not optional, it's used to degrease the mince so it can absorb the flavours and definitely no tomato soup by the gallon...
you *could* use a food processor on the carrots, celery, onions (shallots) == soffritto many Italians say to *brown* the soffritto (not just "sweat" it, because: brown == flavor) then *brown* meat (brown == flavor)... then add the wine. finally add the tomatoes and cook until done. (that's what the City of Bologna says)
Skimming should be done with a loaf of Italian bread 😋
Yep, a well made Bolognese is an incredible dish, over fresh gnocchi or in a lasagna 🥴
I have my own restaurant in switzerland, i'm no michelin chef whatsoever and have no expirience in those kitchens. But let me tell you what marco talks about here sometimes sounds like it's too poetic but he's so absolutely right about everything. The thing about smelling, looking and listening is so important in kitchens to learn and be aware of your surroundings. I love marco man, he's a bit eccentric but i could listen to him all day. I have to add, he's like this now as he's more mature but when you watch old videos of him he was a total asshole haha
