Judging by how the demo program works past the video, Apple 100% mixed in other songs/instruments, so the music used in the Mac OS 8-9 segment is not likely to be one single song like in later Mac OS X intro videos. Leopard and Snow Leopard actually have different timings! On Leopard, the chime would play as the X filled the screen. On Snow Leopard, they sped up the X animation, making the chime play when the setup assistant popped up instead.
