Sri lankan Baby jackfruit Curry / Polos Curry Recipe / how to make polos curry. 🇱🇰🇱🇰
Sri Lankan Jackfruit Curry, known as Polos Curry, is a flavorful and aromatic dish made with young, green jackfruit. The jackfruit absorbs all the rich spices, creating a hearty vegetarian curry. Here's a simple recipe for you to try:
Ingredients:
1 medium-sized green jackfruit (fresh or canned)
2 tbsp vegetable oil
1 large onion, sliced
2-3 garlic cloves, minced
1-inch piece of ginger, grated
2-3 green chilies, slit
1 sprig curry leaves
1 cinnamon stick
3-4 cardamom pods
1 tsp mustard seeds
1 tsp cumin seeds
1 tsp coriander powder
1 tsp turmeric powder
1 tbsp chili powder (adjust to taste)
1 tbsp garam masala (optional)
1 cup coconut milk (full-fat)
1 tbsp tamarind paste or 1 tbsp vinegar (for sourness)
1 tbsp sugar (optional, to balance sourness)
Salt, to taste
Fresh cilantro, chopped (for garnish)
Instructions:
1. Prepare the Jackfruit:
If using fresh jackfruit, peel and remove the seeds. Cut the jackfruit into small cubes. You can also buy canned green jackfruit, which is pre-cut and ready to use.
Rinse the jackfruit pieces thoroughly to remove any excess sap (if using fresh).
2. Sauté the Spices:
Heat oil in a large pot over medium heat. Add mustard seeds, cumin seeds, cardamom pods, and cinnamon stick. Let them sizzle for about 30 seconds.
Add the sliced onions and sauté until soft and golden brown (about 5-7 minutes).
Add the garlic, ginger, green chilies, and curry leaves, and cook for another 2 minutes.
3. Cook the Jackfruit:
Add the chopped jackfruit to the pot and stir well to coat it with the spices.
Add the coriander powder, turmeric powder, chili powder, and salt. Stir to combine, cooking for another 3-4 minutes.
4. Simmer with Coconut Milk:
Pour in the coconut milk and enough water to cover the jackfruit. Bring to a simmer, and let it cook for 20-30 minutes, or until the jackfruit becomes tender and absorbs the flavors.
5. Balance the Flavors:
Add tamarind paste (or vinegar) for sourness, and sugar to balance the flavors if necessary. Adjust the seasoning with salt or more chili powder if needed.
Cook for another 5-10 minutes until the curry thickens slightly.
6. Garnish and Serve:
Garnish with fresh cilantro leaves and serve hot with rice or roti.
